My daughter recently received these two items and would like to use the CE functionality.
She is currently with Amaysim and pays $15 per month and gets 18gb in data.
I believe at the moment only Telstra , Optus and Vodafone offer the service and they are pretty pricey.

Apple Watch is average without it imo.
I was in the same position but after a few months with my apple watch, I don't think I need the call capability from my watch as it doesn't worth the amount of cost increased to move from Boost to a postpaid plan. It apparently tripled the cost just to be able to call from my watch :D.

Ah ok, I didn't realise it was that complicated. All of the service providers I've looked into supported esim in some capacity, didn't realise it required anything on their part.
It's great to hear that your daughter wants to explore the Windows CE functionality on her new devices. Windows CE is an older operating system, so it may have some limitations in terms of compatibility and support.

Some of their MVNO's are now providing eSIM. Woolworths, Kogan, GOMO and amaysim now have esim options.
For apple LTE watches, you must use a post-paid plan and then sign up to a smartwatch plan which is an extra $5 or $10 a month, depending on the offer.

This will significantly increase the amount you have to spend a month, so consider strongly whether you want or need to have calling capability on your smartwatch. Most people don't.
