You call head office and they'll extend it if needed. They get in touch with the store.
Don't even need to call head office. Just call the store directly and ask them.
When I ordered last year from one of the stores in Perth they said they couldn't extend it and it had to be picked up that day even though it hadn't been 3 business days
@Joshminey: I didn't have trouble extending mine by a week. Then again, this was during lockdown in Sydney where I was literally leaving the house once a week to go to the shops (I had forgotten to pick it up during my weekly visit)
I did, and they said they couldn't alter online orders so I called their 1300 and they fixed it.
