  • awesome price. If it really is that steel it's amazing. It's not particularly good at keeping an edge but it's generally used in much more expensive knives - wusthof in particular. Blade thickness etc looks great.

    • One really overlooked thing is the actual heat treatment of the steel can make a big difference in how well it performs. known brands like Victorinox, Wusthof etc have a good reputation and good quality control whilst many other cheaper companies don't.

      • I have wusthof knives - given to me. I don't rate them at all. Good geo but terrible edge holding - they roll almost instantly and I sharpen them at 20 degrees, not 15 or 17 as recommended. I'm guessing commercial folk don't use these knives at all. I wouldn't buy this tukul or wusthof or vitorinox for me. If you are going to buy something like this, then $9 is better than - jesus, $200 or more! I had no idea they were so expensive (just looked). Get the vg10 from Ikea if you want good, or this tukul

        • Do you deburr them properly after sharpening or use a honing rod or strop? I've used wusthofs and never had a problem with a few swipes on the steel getting them to shave. Also have globals, mundial, victorinox and have used no-name Chinese knives, the brands I mentioned are much better and sharpen and last a long time with minimal maintenance. I also have Japanese-made knives that are harder carbon steels, they have their place if you look after them as they do last ages between sharpening but require more effort to look after.

          I would say though the no-names are generally garbage compared to Victorinox, I did sharpening professionally for a while and they don't get as sharp as the others do and also don't come back as sharp when using a honing rod or stropping. Ikea VG10 ones I'll agree are decent though for the price.

          • @mymilkynipples: I only strop now. I used to use a steel in the food industry (because of hygiene). I think that's the only place for them now. Shaving is kind of basic and a minimum - it's the edge holding that's the issue (rolling etc)
