OzB favourite yeast is back on sale. This time with an S & S discount making it slightly cheaper!

FYI here's my dough recipe (tweaked)

400 - 500gm 00 flour (varies I find - you want not too wet a dough)
250ml water
teaspoon of yeast
1 tsp salt
1-1.5 tablespoons of olive oil if you want a crunchy crust.

Key is to let it rise overnight in the fridge. Can't overstate how important this step is!!

Thought more important step is to bake it.

I’ve actually noticed if you let the dough sit for a bit in the fridge you’ll get a crusty-air-pockety crust, better then just costing the edges in olive oil as it’s got lovely pockets of air in it

edit: nobody’s ever explained the concept or need of proofing, but there’s the… proof 😂

Cold proofing dough for pizza for 3-5 days is my suggestion. Puts most other pizza joints to shame. Need to use a good quality 00 flour though, like caputos or la molisana.

I use about 200ml water, warmed to a certain temp, and about 340g flour for 2 pizzas for the masterpro cooker.

        • Where do you buy the Caputo strong flour 00 with high protein? I think the best one is Caputo Cuoco Chef 00 Flour.
Not many places stock it and online prices are ridicules expensive.

      • as a noob baker, how do you avoid getting the dough becoming too sour?

        • +1

I think 5 days a bit of stretch, but 2-3 days is perfect timing for cold proof. You put the right amount of yeast..

  • my dough recipe

How many pizzas do you get out of this, about 3?

    • +1

I do double quantity and get anywhere between 10-12 panuzzi. Decent sized.

Minimum qty is 2 :(. how to use 1 kg of yeast before it dies

    • Pizzas

You store it in the freezer

  • Are all dried yeasts the same? Is this better than, say, Lowan from Woolworths?

    • +1

I would prefer one made in Australia if possible, but it seems not many are.
What this one has going for it: cheap.
End of the day it does the job

      • What you really want is French yeast.

        https://www.goodness.com.au/natural-instant-yeast-125g/

Probably need to find it locally as shipping is usually too much. For those in Perth, the Good Grocer in Applecross have it for $5.

Current packet has lasted over 2 years stored in an airtight container in the fridge.

    • Yes I use Lowan and its price is almost same as this offer, but at least it comes in container with lid so can close it after use.

  • I’m onto my second one, it lasts me about 3 months a packet.
The second packet has lost a little of its potency or it was a bit of a dud… maybe.. I’m using two teaspoons instead of 1.75.
    Still makes good bread.

  • Now if this deal came up during the peak of lockdown….💣

  • +2

Minimum quantity is two, so this deal is totally misleading.

It's $13.90 for 1 kg. There's no way to have 0.5 kg for $6.95 as the deal states and 1 kg is quite a lot for a single household.

If you using for pizza dough, I suggest to download Ooni app. I normally go for 65% hydration, 3% salt, 2% Oil, and 48hr cool temp and 6hr room temp. You find you will need under 1gm of IDY to make ~ 3-4 balls. So this pack will last you well over a year if making pizzas every second day..
Tip: you could place in freezer to keep alive as much as possible, but better to buy smaller packs.

    • What's the app for in this mix again?

      • +1

@pizzzaguy If you download it you will find out. To give you all the right amount for all ingredients relevant to proofing time/temp.
