Somewhere overlooking Ocean, sunset, sunrise, peninsula those kind of tags.
Be willing to drive max. 2 hours from Sydney Metro suburbs.
Any input would be much appreciated.

Based on a quick search on Google Maps, Engadine is coming up as 2h1m drive away from Palm Beach at the moment … breaches OP's proximity requirement!

I would just Google peninsulas in NSW.
Will not get very far as it can take an hour to get to the outskirts of Sydney depending on where you are in Sydney, but it can take allot longer if you get stuck in heavy traffic or there is an accident.
Didn’t see that part of the OP, definitely agreed.
NSW is a big state, getting anywhere by car takes a while.
To get to a border can be done in 1 day, but it is a killer.
