OG switch is great, can confirm.
I have a 1st batch unpatched which I'll be 'upgrading' at some point, but I believe that upgrade can work with later models too (just using different method).
Yeah you'll need a hardware hack, involving soldering a chip to your nintendo switch, this can cost from $100 to $200. Gen 1 is just buying a $2 jig off ebay XD

Why did they patch the later models and why don't you like it
There was a hardware vulnerability with first gen switch which allowed anyone to bypass booting into the Nintendo OS by using a jig to instead boot into RCM (Recovery Mode). This is used as a gateway to installing CFW (Custom Firmware), homebrew, Android, Linux etc. Majority of the use will be for piracy reasons.
Unpatched means you can sail the high seas.
Preference for oled or red box edition?
Amazon has red box for 434.99. They usually price match retail stores so you can keep track of price via camel x3
Maybe not appropriate because it's for a gift, but you can get one from Amazon warehouse for $389.21 (see other sellers from above link). Packaging may not be ok, but the device should be.
