I personally wouldn't bother with anything that doesn't use electromagnets. Yes, its a pain because you need a powerpack to use it, but they are so much better if you like to change the resistance on the fly.

Kiwi Knives from your local Asian grocer for $3 each and then use one of these budget knife sharpeners guilt free :p. I have a Scanpan set also but rarely use them in comparison. Mainly use the chefs knife from that set :).
