We've gotten even a bit more stock for this season, but Lime Blue has also grown over the last year, so who knows how long it will last…Anyways this delayed dispatch (quick refresh, on the new system below) deal is to celebrate the launch of this absolutely wonderful featured Organic Single Origin from Peru. Here's the deal highlights:

We're offering you a 40% discount (only $26.39 per kg, usually $43.98 per kg, see link below) off our current newly launched spectacular featured rotating Organic Single Origin Coffee from Peru for any delayed dispatch request orders placed until 29/3/202. Please note this discount is only available for delayed dispatch orders. Delayed dispatch spots are available as early as tomorrow 25/3/22 and as late as the last Friday in June 24/6/22. Once a delayed dispatch date is at full dispatch capacity it will become unavailable, so lock your spot in quick sticks if you're keen on a specific dispatch date. If you do not reserve a delayed dispatch spot, then your fresh coffee we will allocate your order to a future delayed dispatch date, which means it could go out on 8/4/22 or 6/5/22 or … delayed dispatch priority will be given to those who reserve their spot, so it's important to reserve your delayed dispatch spot :)

      We put our recommended brew recipes for each coffee on our bags.

      For espresso see below:
      Brew Ratio = 1:2
      Dose = 20 grams ground coffee in for 58mm, 18 grams ground coffee in for 54mm baskets
      Yield = 40 grams espresso liquid out
      Contact Time = 27 seconds including any pre-infusion time if you pre-infuse

  • Do you at Lime Blue Coffee have Organic certification as processors? I only ask as there are a lot of dodgy outfits selling "Organic" products at a markup (to justify higher prices) but with no certification to prove the paper trail from farmer to roaster.

      This SO is Certified Organic. A large portion of the world's coffee is grown using primarily Organic practices, it's just that Farmer's either won't pay or can't afford to pay for the official certification. All that said "Certified Organic" has no meaningful impact on what we charge for our coffee, the focus of our costs are calculated on quality which translates to flavour AKA if this coffee was not "Certified Organic" we would still be charging the same price based on quality and how much it costs us. I think you're spot on about the potential for anything "Organic" being used as a marketing plot to pump margins. I can't speak to other industries from experience, but in terms of coffee, from what I've seen if you compare two virtually identical coffees one Certified and one not, an importer will charge a Roaster the cost of a phone call or less more for the Certified one. This extra charge by the Importer accounts for their profit, exporter profit (from the Certification aspect of the coffee)…so you can imagine after paying for the "Certification" how much of a difference financially speaking it makes to the Farmer vs. how much more they can get by putting that money towards producing higher quality and larger yielding crops…the way the financials are structured any extra money used to reinvest in the farm to increase profit from yield is better spent on improving the quality and quantity of the coffee they grow than on a Certification (I mean any certification, not just Organic), not saying it's right or wrong, just saying that's how it is from my experience :)

  • Wow! I see what you mean by delayed dispatch - except that the delay in this case seems to be delivery channel specific!

    I've had some bizarre experiences with Auspost lately - and over a week to deliver within Melbourne seems to be about par for the course. Grrr…

      Shucks Shippit keeps hitting people with worst case scenarios haha please ignore that messaging from Shippit. I bet you $5 that your fresh coffee is delivered next week. If it's not delivered next week then I'll refund $5 from your order back to you. If it is delivered next week then all you need to do on the day of delivery is write a follow up message here saying "delivered." Before I get myself in a world of trouble this is a one time thing only for you and this soecific order (it's not going to become an official policy for all order moving forward, can only imagine how much trouble that would get me in haha) just because the "bet you" expression popped in my head and it's Friday (not sure why Friday makes a difference but it sounds right) :)

        More a gripe with Auspost and their inability to do their core job with even reasonable efficiency & reliability.

        I'm half surprised that they don't just send tracking notifications with a delivery window a couple of months wide - just so that they have a 50%+ chance of meeting their KPIs - and allowing the bosses to maybe get their next 'incentive'. Rolex anyone? ;-)

  • what is the best way to keep the bean if I get like 3-4 kg ? put it in the freezer? how do i defrost it? dont they get wet if you leave it on room temp?

    • Nice fire round questions!

      Ideally you'd order what you'll consume in roughly a month, which is where our unique delayed dispatch system shines, as you can make the most of this deal by placing several orders with different dispatch dates without the need to stockpile. However, if you're keen on saving shipping or lowering life admin (less admin is always a win), then the freezer will be a winner for you. Before freezing it's best to pre-portion then vacuum seal (if you have one) what you'll use in a month or so from defrosting,. Room temp defrosting should be fine, basically all the water content in coffee evaporates during roasting, so no need to worry about wet beans from defrosting. Fun fact, a little bit of water significantly reduces static when grinding and improves flavour by create a mini air gap type effect :)

      p.s. I mean a drop or tini mist of water, be safe, remember water and electricity don't make for a fun coffee party :)

  • I'm struggling with these beans a fair bit on my Breville Infuser. Have been using single origins for quite some time and I know they can be a little tricky to work with, but this time the extraction looks good and it's still sour / tastes pretty nasty.

    I'm putting in 18g and getting out around 40g in 27ish seconds.

    Not sure what to do - I tried a finer grind and nothing came out at all.

    Should I be trying to pack a bit more in? This morning I increased the water temp by 1 deg, might have made a marginal difference but still not tasting as it should.

      Roast profiles for a given coffee impact the ease of extraction. Blending different coffees or the same (homogenizing SO batches) is where coffee can get tricky to work with if the profiles don't account for bean structure impacting porosity, anyway I'll stop going off on a tangent haha

      Reading between the lines I think your grind may be too fine, causing channeling (water bypassing the coffee to find the path of least resistance). Channeling can result in a sour flavour. This is good news because we should hopefully be able to fix this situation in no time. To get your extraction to result in delicious coffee will require a bit more info. You're welcome to shoot through the answers here, but it may be best to send the info through to [email protected] as I ideally need photos and video. I need the following from you please:
      1) What make and model is your grinder?
      2) Please send me a quick video of your extraction
      3) I need a photo of the coffee puck straight after extraction is complete, while it's still in the coffee basket, as well as a photo of the coffee puck post extraction once knocked out of the basket
      4) What temperature are you currently extracting at?

      I know the above seems like I may be asking a lot of you, but delicious coffee is worth the extra mile :)

        Well as a first measure it sound like I should just try a coarser grind? I just thought sour = underextracted which if anything meant it was already too coarse.

        I am using the Breville Smart Grinder, currently on size '6'.

        I will give that a crack first and then if I still have trouble I can send you through more details.
