Honestly I feel like I could sell the GPU alone and be happier with the outcome than selling the whole thing lol
I'd slap the parts (or nearest available) into https://au.pcpartpicker.com/ and knock some price off. The first thing I would do to see if your deal is fair would be put the parts in there.

I mean yeah there's some good kit in there. If I was in the market I'd probably consider $2500 a good deal.

Youre probably better of selling individual parts
If you put it all together from scratch, then start by charging the combined cost of components + 10% (for personal labor).
Give it a couple of weeks on Gumtree/Facebook and if no one's interested, then drop the price by 10%.

Your link says all the parts cost $1613 so add an extra $150 for assembly? Why have you got 2x 500GB SSDs
Might be wrong here but that cooler feels very small for that CPU. Probably doesn't help the thermals that it's in an ITX case
It might be more hassle, but you might recoup more costs back by selling the parts separately.
Most ITX users might want to build themselves, and component choices in each build can be quite personal. Might not be easy to find someone wanting exactly your build, but different parts you might find people looking for them.
Also, by saying you dont wanna game, do you still need the 5950X for work? You can just keep the GPU or sell it, and get a cheap second hand one if you want to recoup GPU costs.
Find a similarly spec-ed model on Gumtree/FB Marketplace and price yours accordingly, if you can't find one, look at some retailers and find see how much a PC like yours will go for.
If you can't find any solid pricing, you might want to sell the parts individually, though that can get a little messy.
