Video quality wise I think it's the same as current flagship phones. You're essentially paying for the form factor and convience.
Yes, the pocket series are brilliant. The idea is a very portable video camera with great quality and Pro modes. You can carry it everywhere because it is truly extremely small which will let you get professional looking footage you might not have without it. Whilst flagship phones are definitely more versatile and arguably better in areas, the gimbal stabilisation is the visible difference between amateur and professional looking dynamic footage.
Phone gimbals need to be balanced and are bulky from necessity. Drones take much longer to setup and are bigger, noisier.
I have an osmo pocket, a Mavic 2 zoom, an osmo mobile 2, insta 360 one X, S21 Ultra, and a Nikon p950. All have their uses without overlapping but if you are someone who has an artistic or cinematic streak and find yourself roaming the world, the pocket are great to have on you to capture those moments.
can i ask what the combo package has extra over just the normal package?

Product-wise, is this pricey for a $600 gimbal camera that does not even fly (compared to the $600 DJI-branded mini/selfie drones)?
Looks like Osmo Pocket 1 may be better value as well
Is it sufficiently usable to justify against a cheap gimbal + existing phone?
