Yep, seems you can use as many as you like in store. I paid the remaining amount for a PS5 ($550) in store recently entirely with $50 Ultimate gift cards.

at absolute cheapest id think these games could be bought new for 50-60 minimum (so this gift card may help) but it’s more about whether you want to play now or wait.

My cards pin number bizarrely had only 3 digits and said it couldn't be used…took a few punts and turns out the missing number was a 0 in front of the 3 digits that were noted.
