  • Is this good for gaming?

    • Yes

  • Would this be suitable for a DIY external boot drive for a 2018 iMac?

    • +1

Once you pop it in a (10Gbps) USB-C or Thunderbolt enclosure it should be fine. Bear in mind, you'll likely not be taking full advantage of a TB enclosure but it should be plenty fast enough with either option.

If you're feeling a little more adventurous, you could pop the iMac open and add an internal nvme drive, with an adapter. You'll match or slightly improve on the speed you'd get with a TB enclosure at (much) less cost but there's obviously risks involved. I've done it on an old 2012 IMac 21.5" but the 4K/5K screens aren't cheap so haven't plucked up the courage to attempt it yet. The TB/USB-C option is a lot safer.
