I'm open to any other suggestions, as it will be primarily for Uni and I already have a PC it doesn't have to game, I just don't want a clunky laptop that takes 20s to open a program.
Thanks!

Very tempting, but I'm not a huge fan of the mac OS
Neither am I. I use a Macbook Pro M1 for all my music stuff, and I use an AMD Ryzen 7 Dual boot Mac/Windows.
Take a look at [Geekbench] and the M1 blows Intel based units out of the water. My AMD Ryzen in MacOS was running at @ 1216 on single core & 6297 on Multi-core.
If you look through the bargains list you will see it is $1349 at HN, however, much cheaper using OW for a PriceBeat.
Otherwise Acer. If your screen cracks, they are cheaper to get repaired than anyone else.
I'd recommend looking at the Lenovo education store. Helped my sister pick out a nice laptop about 6 months ago. It was about $300 cheaper than Officeworks. https://www.lenovo.com/au/en/aueducation/
I've heard good reports from Lenovo, the shipping dates are a bit of a deal breaker though. I have a HN down the road, I could pick up the others today.
I'm a big fan of Lenovo Carbon X1's
Best keyboard in class
extremely lightweight and durable.
Can be had refurbished off ebay for peanuts.
Have had one for 2 years now and still get 6-7 hours out of the battery (it's a 5 year old laptop)
https://www.ozbargain.com.au/node/642338 & add 8 GB RAM later
AMD Ryzen 5 5600H, 8GB RAM, 256GB SSD, RTX 3050 4GB = $1,039.20
OP is looking for a laptop for uni, so he probably wouldn't need a 2.4kg gaming laptop with low battery performance.
Other than that, it's probably one of the best bang for buck laptops

Although the dell is a great deal
Note that the Surface Go does not have a backlit keyboard, for this reason, I would not recommend it
MBA M1 (if on sale) if you don't mind loosening your budget
