Greetings cooking enthusiasts.

If like me you have been converted to using carbon steel pans (common with chefs and restaurants), then you will no doubt have heard of Matfer Bourgeat pans.

Rivet-welded & removed construction is strong and beneficial to ensure leftover food particles dont get stuck around the joins.
Can be seasoned for non-stick use and prolonged life.
Great for searing and frying.

Yes the pan is pretty big @ 17", but at $69 its a smoking hot deal.
A lot of metal for the price and you can expect it to be heavy so you better steele yourself

    • Which is ridiculously large. Standard size frying pans are 25-30cm (25cm is just about 2 steaks depending on the angle of the lip)

  • There is no way ANY chef or restaurant would buy a $63 black steel pan lol.. they pay about $12 a pan!

    • Or even the Pyrolux ones are good quality if you prefer a rounded edge,

      Mind you not 12 a pan

      • Already have a Pyrolux… the one in 12" was good i must say, but being very thin it was very prone to warping.
        America test kitchen put quite a number of carbon steel pans to the test, with varying price ranges. Seems that with these things, it really is a case of "you get what you pay for"

    It's just too big even for ppl living in a mansion with private chef. And for a carbon steel pan/wok, there really isn't much magic in there. Any carbon steel pan/wok will perform pretty similar to each other. All you need to do is to find the right weight and feel for urself at the cheapest price available.

  • carbon steel pan is more comparable to cast iron, except for them heating up faster but their heat arent distributed as evenly .

      What decisions?

      You need one of each of the following pans in your house:
      Cast iron, tri-ply/multiclad stainless steel, and a carbon steel wok. Plus a nonstick pan for the people in your house who don't know how to cook.

      • people who dont know how to cook can either take away or starve till they learn..
        i need a pan to make chilli oil…. but im not sure if carbon steel is the way to go, i dont want to season it with chilli oil lol~

          You could potentially buy a cheap small carbon steel pan?
          I first ventured into carbon steel by buying the tiny Pyrolux carbon steel 5" pan that i just use to cook eggs and small pancakes..

          Honestly works pretty well.

      • You also need a dedicated non-stick for omelettes or crêpes.

          carbon steel pans actually work quite well for that

          • @KnifeEnthusiastBoi: Yup, it's all about temperature control. No need for non stick plans when making pancakes /crepes.
