Moved from Sydney to the Sunshine Coast a few months ago, am now about to replace all my car's tyres, and wondering whether I should get Summer or All Season tyres. Oddly enough, tyre online stores don't offer this characteristic as a filter—only dimensions and speed and load ratings.

Maybe it isn't. Indeed I don't see it mentioned anywhere in Aussie online stores and catalogs. But just by looking at the tread patterns, some are clearly All Season and others Summer tyres.
All seasons might be more for countries with snow/ice I guess? Not so much rain or general cold.
Australia just has normal tyres. We don't really have winter with snow and ice, so need need for winter tyres, except maybe near the ski fields.
Aren't winter tyres also for light mud? Regardless, mostly all I see advertised seem to be All Season, not Summer tyres (just by looking at the tread patterns).
AT (all terrain) tyres are for off road, light mud. Typically for an SUV you’d get a highway terrain (HT) tyre. HT is factory fit for most SUV and 4Wd for on rod, reduced noise reasons. Step up to AT for more slippery conditions.
Don't forget fuel economy.
Call them up and ask, then let us know if they laugh at you or act confused.
All season is for snow and ice conditions from what I understand. I would think all tyres sold in Australia are "summer" tyres.
Go to Bob Jane T-mart next to Caloundra Bunnings. The guys there are awesome and will give you the right advice. I've always found them really helpful and well priced.
Is their pricing different from Bob Jane's site and catalog? I'm finding more expensive (than, say, Tyroola/SupercheapAuto).
I just let my tyres get a little bit more hairy in winter and shave them for summer ☀️
I know absolutely nothing about tyres, but why would your tyre requirements on the Sunshine Coast be any different to Sydney?

Unless the dealer new cars are being sold with different factory tyres, there isn't really any special requirements for tyres where you are unless you are doing some niche.

I don't think scorpions used to be sold as AS (just HT).You don't need all season or summer tires in Australia, and certainly not anywhere in Queensland lmao.
You just need whatever tires suit your budget and needs. All season vs summer tires is a debate for countries that get snow. Some people there opt for all season, reduced performance in snow and dry, but only one set of tires. Others opt to have a summer and winter set that they swap over.
If you're talking about tread pattern and off vs on road that's a different debate and I'd need more info to make a comment.
As All Season performs worse than Winter tyres on snow, I thought they also performed worse than Summer tyres on rain, as Summer tyres have deeper and larger water channels to clear out the water. But I see that's not a concern here.
