The Suehiro Rika 5000 is one of those rare polishing stones that give the user great feedback, while retaining good sharpening speed. It can be used by just applying water during sharpening, but a 5-10 minute pre-soak greatly improves polishing quality.     I just bought a Cerax 1K and Rika 5K about a month ago for ~$90-100 each. Good stones.

      it would be uncomfortable as the shape the handle to fit the palm and finger joints as with left or right handed ….. global and tojiro aren’t left or right hand specific …..shun went the extra effort for ergonomics and carry 2 knives in that length ….also left and right side of blade are different angles which you would find when sharpening …..

  • How often do you have sharpen a knife like this Tojiro? Is it alot of work to maintain?

      Depends on use and care during use, also how good your sharpening skill is..

      If you regularly maintain the edge, you probably don't need to sharpen more than 3-4 times a year. Even with regular use.

    • I sharpen my tojiro knifes around 3-4 time a year on a 6000/3000 whetstone. Takes 5 minutes each. After a few months they do feel not as sharp so that's when I get the stone out

      The Suehiro whetstones will last longer as compare to King KW65, I'll pick Suehiro anytime.

        • I got the king 1000/6000 out of necessity before since everything else was so expensive/skill didn't justify. But stones last (near) a life time so your skill will scale and you'll be glad you got these.

  • Thanks OP, I follow Ryky and been waiting until my next trip to Japan to purchase my choice pick of whetstones. The Suehiro 1000/5000grit are exactly what I wanted, all that's left is a Naniwa chosera 3000 (quick touch up when I don't feel like soaking stones).

    Never used a gyuto before but this one looks like a decent entry, picked it up too.

    • Chosera 3000 is around ~$200. It's insanity

    Sadly I missed the Shun which is hard to find and although tempted, I know the boss won’t be happy if the Tojiro appears at the door.

    • There are restrictions on importing some types of knives but kitchen knives aren't included.

          I'd suggest also getting (or making) a leather strop. 90% of the time a quick touch up with the strop is all that is required.

          • @tonydav: Agree. I've given away my steels since making a strop 5ish years ago.
