I need to buy a few slim fitting, well made suits in melbourne.

Very loaded question. Your pricing expectations would narrow it a lot, "Best place" is rather subjective.
I'd suggest you give Travellers Apparel in Collingwood a shot (http://www.travellersapparel.com.au/)
If I recall, suits start from around $500-600, so they're not $300 shopping centre cheap, however the price includes tailoring, so I think it's quite reasonable. The place has a rather old schoool feel to it rather than a modern uber-trendy style (eg Joe Black), but the guys there do understand a modern slim suit.
They do also do womens suits, however I do warn you that it is a warehouse setup, so change rooms are rather limited. And if you're a bloke, you might find yourself in a larger room with a bunch of other blokes all getting fitted at the same time.
Saturday mornings (especially since we're hitting prime wedding and Spring Carnival season) will be super busy, so I'd suggest getting there early.
For quality yet bargain price items, try Stafford Direct. Quality is impeccable.
Although for the best made suits, buy the cloth and get it tailored.
