As per the title, there doesn't seem to be an option online to price beat.
I called up the store, and they are expecting stock later in the day (as I was planning for C&C). But still…
So the main question is:
If customer service is able to confirm price beat over the phone, how does one pay for it in order to get delivery?

Even if you get PBG by calling, then what? Do you have to go in-store to pay and collect?
Is there an option for delivery (which would mean payment via remote means)?

Let me get this straight, you called up the store, were talking to them on the telephone, and didn't ask them this question? You then decided that rather than calling back and asking, you would post a thread on ozbargain?
For price matching online as another poster has already mentioned you call 1300 OFFICE (1300 633 423) and they perform the price match over the phone and you generally pay by credit card I believe which I think you can tell them over the phone or have your credit card details saved to your Officeworks personal shopper account.
Also note for click and collect orders you will not be able to do same day C&C until the store has confirmed that stock has been received which generally takes a day to process into the store's IT inventory system ie stock received on Wednesday will take until Thursday or longer to show up as available and then can be ordered as a C&C. So if the store does not have stock it will take additional time depending on the item as it will be directly delivered from our warehouse to the store but be aware many Officeworks stores are having stock shortages so they are getting stock shipped directly from suppliers so this stock cannot be allocated to customers as C&C until our IT inventory system shows we have stock available.

Wish there was a quick way to do it all online… checked out Amino Z website recently they had some sort of "instant" upload for processing by the team

I think OW also have free metro shipping for orders over $55. They've been super fast with delivery for me.
