Meat should be consumed within few days it is not short date IMO
I think you can buy and put them in freezer for later.
Meat can last for over a month in the fridge if packaged and stored correctly.
I frequently keep meat in the fridge for around a month if it’s been cryovac sealed.
Or in the freezer for more than 6 months.

a way to get around this is take the cutlets out of those plastic trays and put them in the re-sealable plastic bags= takes much less place in the freezer
i just vac pack ( i don't have a new freezer)

Great price! I’ve been buying lamb racks recently in Aldi for $20 per kilo. Each makes 9 cutlets + a piece of fatty meat I use for plov (rice, meat, veggies)
