FINALLY GOT THEM! Here is how I did it for those wanting to know:
I had the checkout page already open (was able to go back through browser history and open the one from yesterday), with the discount code already entered and applied, my credit card already selected and my delivery details chosen. All I had to do them was spam click the buy button from 12:59 onwards.

You need to make a choice, whether to go for it with Buy it now or go for Add to cart. The latter could give you a head start next time around.
The up side with Buy it now is you have a better chance to get it if it is not already in the cart. The down side is that if you missed out, you don't get a head start next time around. Unfortunately, the tendency is that it gets harder to snatch one later in the day.
Bah. Went to good guys to pickup my jaffle maker. Was trying to put through on mobile and the app just kept on giving error code Resource not found (request.commerceos.2). Was refreshing constantly from 12:58PM, didn't even get the buy it now or add to cart option.
Most machines and phones perform time sync using NTP so the time is accurate. Again, given the deal is listed on OZB, you know you are up against OZBers. So you have to gamble. If you believed the deal will be released on time, then really check your clock and start on the dot (not a few seconds before or a few second after).
Anyway, as now pointed out by other OZBers, you can use the browser history trick so it probably doesn't matter which way you go for. However, you do need to at least get into either add it to cart or buy it now stage.

@CalmLemons: Yes, so you really need to be fast at 4PM (since you will be up against people missed out at 1PM but have them in their history).
It's better go for for Buy it Now as pointed out by GS03. Hopefully, there is another session at 6PM or later today. Anyway, still give it a go at 4PM, aim for at least manage to click on Buy it Now. You'd never know. Some people reported success in one go at 1PM. The 1PM session did last longer than usual.

Managed to go to the cart stage to realise I don't have eBay Plus anymore…. Any tips on a cheap way to get eBay Plus again so I can retry at 4pm? The previous deal with a $50 eBay gift card seems to have expired.

I have the item in my cart already and would simply have to hit the Buy button repeatedly at 4pm. Have been successful this way 3x before with other listings.
Talk to eBay CSR to see if they can offer you the $50 eBay gift card deal - if you really believe having that in the cart will actually get you good enough chance to take the gamble.
Otherwise, sign up for another eBay account and use the trial.
Good suggestion, didn't realise eBay had live chat. Just tried, CSR wouldn't budge.

I was cynical about these too. If you are in Apple ecosystem, these do come in handy.
They don't sound awesome (compared to decent headphones or quality headsets), but they are convenient. Basically, you don't need to find your handsfree kit / earpods and plug it into your phone or laptop. Not a big deal initially, but after a while, you start to get annoyed about using handsfree kit once you get used to these.
Most of the time, we don't need top notch audio. And, you know Apple generally are good at integrating their own products to work seamlessly.
It's not because these are awesome, it's because they are convenient. On Android and PCs, they are not as good and your mileage will vary. These do have compatibility issues with some Android phones (especially older ones) and you know Apple don't give a damn about making these work well on Android.
