These guys are meant to be pretty good, but haven’t used them myself.
For sheets get pure cotton ones, they are much nicer than the blend ones. However, I do like the bamboo ones as well.
If you have a DFO nearby you can have a look at a few places in one visit.

Bought bamboo sheets from Costco about 6 months ago. Nicest sheets I've ever had.

I have 400 thread count Sheridans that i put on when i think i'll get lucky. They were ~$100 a set. They feel like you are staying at a top hotel.
I also have some Target sheets that I paid $20 for on closeout (a tip from OzBargain) and they are pretty good. Not scratchy, not too thin.
I got my queen mattress (in a box) off Groupon. It was ~$400. It's comfy.
I also got a queen mattress for my spare room off ebay for ~$200 and my occasional house guests say its great.
I got my feather pillows off groupon ~$40 pair and the doona was ~$60 same source
It was already mentioned but we're buying a Koala mattress soon, and sheets probably from Canningvale as we can't afford silk. I've had towels from them for many years now and they're great.
I've had silk sheets. Over-rated IMO.

My old housemate raved about these Koala Mattresses https://au.koala.com/products/koala-mattress. I slept on it once or twice and it was pretty good surprisingly. It comes in a box too which is odd.. but they've also got a 120 night risk-free trial which is cool. Free 4 hour delivery in most cities is also cool plus they're also made in Australia.
Linen wise it really depends how much you wanna spend but cos it varies so much from sleeping between soft clouds or sheets of sandpaper. However don't get sucked into the thread count cos its bullshit, anything above a 400 TC and it's not worth it. The best way is to feel it yourself and imagine it over your body lol. I would recommend Aura Home https://www.aurahome.com.au maybe on the more expensive side but have good sales online or in-store (Melbourne only) and also some Myer and David Jones' sell some of the styles.
