I think Sydney has more hey you participating businesses while in Melbourne skip has more. Skip also big at airports - qantas lounge etc. I actually prefer skip.
When I was using hey you they offered their specials frequently at certain venues and it resulted in annoying slow down for everyone. $2 coffee instead of $4.50 for example but you had to wait 20mins. If you didnt use the app and you were just a passing customer you probably started avoiding that place based on the waiting experience of the hey you specials. I ended up avoiding them if I was in a hurry. Skip seems to have specials that are more spread out like $2 coffees for all venues for 1 hour or 20% off all orders for a day etc. It means it doesnt result in a crazy slow down.
Skip was also first to offer bring your own cup and some places give you a discount when you do like 50 cents - (i havent used hey you at all this year but assume they would have that option too by now).

Skip has not been very active in terms of marketing in Sydney but certainly have the potential. The app is simple and intuitive to use.
