  • Quite possible the most over rated higher end knife brands in the world.
    If you were to ask 100 people who had Global knives for 2-3 years they would sum up the quality of the knives in one word: disappointing.
    Brilliantly marketed though!

    *one MAJOR exception.

    The Global bread knife is off the scale remarkable. Contrary to their other knives, quite possible the best bread knife on the market.

  • ok… I'd recommend most of the higher end Japanese knives, just not Global I regret. As I said before though they do make an outrageously good bread knife. Otherwise higher end German knives are my preference. Brazilian knives can be excellent too. Ivo' comes to mind. Surprisingly the high end Scanpans' and Wiltshires can be excellent as well. Victorinox… excellent/robust. A note on Jap' knives if I may. Most are well known and their claim to fame is the hardness of metal, (and yes they DO cut VERY well). This is subjective IMO. I think… big deal as this also means better sharpening skills generally need to be effected. BUT a slightly softer knife is easier to sharpen, YES they might need to be 'touched up' a little more often BUT they sharpen up beautifully with predominantly similar edge retention. A super hard category knife may or may not hold an edge longer (in theory they do, in reality… hmmm not always) with the added 'bonus' that if you drop a harder edge $$$ knife it is very likely it will snap… typically nearer the tip end, but not always.

    Not easy to 'fix' one that has broken completely in half. Imagine spending say $600 on a GREAT Japanese knife and it slipping off a counter by your niece when she was helping you make pizza one night! A softer metal knife will likely just bounce (don't try to catch a falling knife/step the hell away!!!). Please note these are just my observations and opinions. I fully accept that there are Global owners out there that swear by them. And thats ok!!! Some people like Hondas, some people like Harleys. I feel that a $100 German (or others I suggested) cut about 95% as good as a $600 Japanese knife. Guess you could put it down to a combination of budget, disposition/inherent bias and opinions/overall expectations/practicality/ego? and whatever else one could add to the list of considerations. As for me, I'm the hard core practical type.
