    After buying a couple of Kiwi Knives from the local Asian grocer for under $30 I've come to realise that these fancy expensive knives are way overrated

        I'd almost rather have cheap Kiwi knives than Globals myself. They (Kiwis') don't have particularly great edge retention but sharpen up amazingly well. Probably due to their more inherently thin blades, the quality of metal… well, thats another story. One can put an edge on a Kiwi knife that will rival a professionally sharpened (good) Japanese knife. But again, the Kiwi won't keep the edge anywhere near as long. Ladies especially like using them because they are very light. I'd agree with KT'. For the price, Kiwi knives are something special in their price category. I'd happily have a set of them in my kitchen BUT I would expect to be doing more edge maintenance on them than others. Globals are well marketed, overpriced and over rated in my opinion. Notorious for developing 'chippy' edges. It is said that there are a lot of Global copies out there and has been for years leaving many wondering why the hell they don't respond well when sharpened. On the other hand I've certainly seen some Globals that 'prove' their genuineness by virtue of sharpening up well.

        Sure wish some Wusthofs' were available/left. Not so expensive, very good edge retention and more reasonably priced generally speaking.
        As to Damascus knives most chefs learn that they look great but don't perform well IRL. Thus not so many use them over the longer term. I'd like to get a set of 5-10 if only to put in a frame and hang on a wall if only as a conversation piece as they do look particularly beautiful. Would like to hear more opinions from any who have used Lakeland and/or Oxo brand knives. I lean heavily towards German and Brazilian made knives for the better part. Jap' knives vary GREATLY in quality and are better utilised by those who enjoy advanced knife sharpening in a somewhat more… devoted way. Also, if a Jap' knife does happen to slip off the counter, it is VERY likely to break when it hits the floor. The extra hardened steel increases brittleness making them FAR less forgiving.

          The Damascus paring life I have looks nice I agree. So I put it in my display cabinet. Lol
          Well, global has three tier in their system. Standard. ni and Sai
          Global Ni knives look really nice. Like pieces of art. Thinner handle makes them look like Japanese sword handles. Global sai handles are very ergonomic. Since I bought my sai knives a few years ago, I haven’t sharpened them once. Still sharp. I think $300 is reasonable for Ni or Sai knives as it will last many years. I better not drop them then as you said. That would be bad.
          Lake land knives are cheap now, $6-$10 or something,

  • Fyshwick ACT have Lakelands, Oxo and a couple of Damascus knives… No global which is what I was after though.
