Received an email from Kitchen Warehouse advertising the 6pc knife block set (Global Sakura) for $199. Available for pick up in store or get it shipped for free (until 11 Feb). Looks like plenty of stock left.

Not a bad looking knife block. Have used Global knives for the last 10 years (I have the same knives but in the Synergy set) although I prefer the look of this knife block.

    How do people keep these knives sharp? I have the Global knife sharpener but feel like they could do with a better sharpen after 4 or 5 years of usage.

      • Yep, this is the best of all the sharpeners. Unbelievably professional results every time.

      • They look cool but they are quite expensive. Looks like ~400-1000 depending on the kit you get. How much better are they than the cheap ebay ones?

      • Gave the minosharp 3 another crack after using stones. Surprised me. Sliced a tomato very easily. Dunno what I was doing??!?! Just need to do it more often.

      Sharpening stones. Not really hard to use and doesn't take too long.

        Unless you are skilled at using a stone and can get 20 degrees on each side then you are not going to sharpen the knife as well as any knife sharpener will.

        Using a stone improperly will create an uneven arch which means the edge will fold over and you will end up with a dull knife.

        A ceramic roller sharpener is easier and guarantees you will get the right edge.

    • Bought an electric diamond knife sharpener for only $23 on Aliexpress. Took my old Global that couldn't even cut a tomato, and made it better than when it was brand new.

      • I bought the one aldi was stocking several months back, agreed, this is the way to go for the lazy. But I hear stones are better if you have more patience.

        I think when you have let your knives get so blunt that they can't cut a tomato, any knife sharpener device will do a good job. So people should be wary thinking that this aliexpress jobo is the best thing out.

    • If you are using a ceramic roller sharpener it will have the ceramic rollers in the shape of a V / arch that has an angle of around 35-40 degrees which is exactly what you need to keep the knife sharp.

    • I use a jig system that was mentioned in a previous ozbargain thread on knives. I say 'use' but really it's 'used once', cause I sharpened my knives six months ago and I've used a honing steel to keep them sharp since. I can't believe how long they've lasted. I don't know the name of the jig system. It's a Korean or Chinese thing. Similar to https://www.chefknivestogo.com/edgepro.html.

        AlbyDuck, the honing steel don’t actually sharpen your knifes. You don’t use them to sharpen or keep them sharp. What it does really is to ‘realign’ the blades, ie remove edges or keep the blade straight. It won’t make it sharper.

        • Semantics, I guess. I get that honing doesn't remove steel or make the edge of the blade less rounded. 'Sharp' meaning easy to slice your tomatoes is what I meant. My point was that you can go a long time without needing to sharpen your knives if you treat them well and hone them regularly. I saw a video on all things related to knives where the expert's advice was to get your knives professionally sharpened once a year and hone them regularly.

    A word about sharpening… Global knives are factory sharpened at an angle between 10 and 15 degrees. Take care using the sharpeners that are designed for Euro knives. Google will help with innfo about sharpening Japanese knives such as Global and Furi etc.

      • Lol that mino Tsuchida is the real deal. Such a pleasant man to watch, very good info. No bs approach and tells you to not wipe the slurry off as it does all the work for you. If you want a laugh rewatch the video with subtitles on haha. It's hilarious. I live this dude such a likable old school master.
        I like the fact that he says using a guide is better than his own technique.

      • I've had this one bookmarked for a while. I watch it every time I sharpen which means I should probably sharpen more often. I have the minosharp and a couple stones. I struggle a bit to get them a sharp as they were originally maybe 7 years old.

    • Very good point. Particularly, the type of steel use is different for jap and euro knives. So you’ll need to know the difference when sharpening them.

      But for the casual home chef, it won’t make a critical difference I suppose.

  • This is a good deal for a great knife set as I've got the 18cm cook's knife which Mum paid something like $140 for by itself a couple of years ago for my b'day and it's still my best and sharpest knife. When we bought it we were told that Japanese knives are different because they "are only sharpened on one side" apparently. Don't know if that's true or not but I've been too scared to put it through the sharpener!

      Most ‘consumer’ Japanese knieves are the standard double bevel (ie. sharpened on both sides). Most global are double bevel. You should also be able to tell by looking down at the blade from the handle.

      Japanese knives are sharpened at 15 instead of 20 degrees. This makes them sharper, but will blunt more easily.

      That’s the main difference from euro knives

      • I agree. Also Japanese knives are very often more expensive. They are typically made of harder steel thus WILL BREAK as they don't 'give' so easily to bending if dropped or misused. I like them but would suggest they are more for the pro' chef who is well aware of the pros' and cons. Other knives are more forgiving and edges are likely to stay sharper longer as Wandersen pointed out. Wusthoff', Zwilling, Ivo and a host of others are better for domestic use where higher end brand name knives are concerned IMO. My thoughts are purely anecdotal and I fully accept some may disagree with me. But overall, I feel Globals are a bit overrated.

        Side note:

        Funny enough, many el cheapo' knives will sharpen up amazingly BUT the edge retention will likely not impress most.
        IOW, they will become dull a in relatively short period of time. NOT good for busy kitchen restaurants or cafes!!!

  • Chefs choice make the best electric knife sharpeners. It will take less than 1 minute to get a blunt global knife to sharper than new. They use the correct 15 degree angle. $350 though so it costs more than the knives.

    • I like Wusthof. More weight to them which I prefer. That said there won't be much if anything in the sharpness and performance.
