    I'm keen to try this, but I'm too chicken.

      Preparation Instructions:

      To Prepare:Preheat oven to 190°cRemove neck and trim wings to 2nd joint, open the vent at the leg and drain any liquid from the cavity. Dry the skin with a paper towel and season the duck with salt. Place your favourite herbs in the cavity. Place the duck on an oven rack in a roasting dishRoasting:Roast in the preheated oven until brown all over and juices run clear. Approximate roasting time is 40 minutes per kg.Allow to rest for 20 minutes before serving.

      Accordingly if 2.1kg will require 84 minutes + 20 minutes resting = 1 hour 44 minutes (seems pretty long waiting time)

      • I was thinking more along the lines, defrost and cut the parts outs…. 5 decent sized portions for a weeks meal?

        • Might worth cook 4 portions to 70 minutes (close to done), leave 1 till full time(enjoy now). Cool down those 4 portions and keep it frozen then re-cook for 20 minutes each portion (10 mins each side) whenever you need it, also worth try a thin layer of maltose syrup when hitting last 20 minutes or when re-heat, it makes the skin crispy and taste nicer.

    heated oven 200 degrees and lower it after an hour to 180 degrees. Roast duck, just rub chicken salt inside out. Roast for 2 hours, turn over after 70 mins.Last 10 mins, brush Golden Syrup on the skin and roast for 5 mins, turn over and do the same, brush golden Syrup and cook for another 5 mins.
    Duck meat fall off the bone. Try it and let me know. My personal recipe.

    If you want more flavour, buy HoiSin sauce for dipping.Get a proper brand made in Hong Kong.

    thanks for spotting this OP - my local Coles (Engadine, NSW) didnt seem to replenish stock during the last 50% off these ducks. Made sure to grab a couple this time round. Yum :)
