I guess the question boils down to whether you would pay $60 for the ability to control from wifi outside your home. I wouldn't pay $219, but for $149 the convenience justifies the extra dollar for some people.
I bought one of these over a year ago and probably use it once a fortnight. It hasn't failed me yet and works great with the app through Wi-Fi.
After cooking with it, I just give it a rinse, let it dry out and put it back in the box until next time.
Just my anecdotal evidence.

Yes can use without the app.
I have the bluetooth model I synced the phone once and have not since because manual is easier.
