Well, I'll take the bait.
If you can use your stove to have water circulating in a pot (mechanical circulation is key), for lengths greater than 1 hour and keep the temperature uniformly within 0.1 degree of your desired temperature, well you're a better cook than most. The water never makes contact with the steak so it isn't boiled FYI.
Try a sous vide steak and a boiled steak you'll notice the difference.
i'm no scientist but if I have the stove on a low temperature for an extended period I will eventually have water at 100C. This ticks the box for the accuracy to 0.1 degree. I may need a third party device (aquarium filter) to circulate the water although I doubt this adds much flavour. Thirdly I will also use a zip lock bag as shown in the picture
You're correct in that this is practically the same as boiling a pot of water for the 100c degree mark, but for any other temperature, I wish you good luck.
Can’t wait for you to post the video showing the temperature control you have with the boiling pot on the stove top.

I used mine tonight. Four fat porterhouse at 53.5 degrees for 2 hours 20 minutes then finished off in a hot pan to sear and colour. Delicious. If you don't have one, seriously consider purchasing.

do you necessarily have to use good steaks? even cheap aldi steaks would work right?

You get better value for cheaper cuts of meat as you can break down the sinew and fat by cooking them for longer, tends to release a bit of flavour in the meat too. For example blade and cheap rump I like to cook for at least 8 to 12 hours, 24 if they're really tough. I tend to just throw a bbq rub in bag for steaks, but most of your seasoning/marinade can go in the before too.
Been using my anova for about 2 years and can't rate it highly enough.
I came here for the comments, bought mine in the last deal. If you havn't had a sous vide steak before, i want to say your opinions honestly have no weight in the conversations of sous vide steaks vs normal steak and which is better than the other :/
