Time to make Peking Duck again!
You make Peking duck at home? Sounds like a lot of effort.. Any recipe recommendations?
Sorry just saw this.
yes i have made a few times at home, not that hard as I thought.
the recipe I have was recommended by one of my colleagues, it is in Chinese though, try Google translate, Good luck!

I grabbed one of these last time and broke it down. Had duck legs one night, duck breast the next and then duck and mushroom pie with the leftover bits. Duck jus and rendered duck fat sitting in the fridge as well :D
The 1.8kg are pretty small and not worth it in the meat to bone ratio based on my previous purchases. You wont get much breast meat at all.
Totally agree.
these was on clearance at local WW 2 weeks ago for $3.40 each… Freezer now full of ducks…but tasty!
How do you cook it? Bought a lug a duck weeks ago, still sitting in the freezer. Was thinking of making a stew, but I don't have a pot bit enough. Can you thaw it, debone and throw it on the bbq?
This particular brand? You want to cook it with as much salt as you can. I'd also recommend marinating it with tears.
Are you sure?
@zealmax: Definitely. It just wouldn't be Pepe otherwise.
I'd break it down to breasts and legs.. search youtube, ducks are a little different to chickens they kind of come off in one piece instead of thighs and drumsticks.
You can pan-fry the breasts, score teh skin and fry skin down for quite a while on medium to render off as much fat as possible, then flip and finish. Breasts should be served pink in the middle
The legs need to be cooked through well, you can try somethign called confit (look it up) and serve with puy lentils.
Bones can be used to make broth.
Alternatively if you feel like a multi-day project you can try to replicate peking duck (chefsteps and seriouseats both provide recipes for the home cook)
I applied for a job at Pepe's. Got a tour of the facility and all. =O
Are the Ducks treated well? Do they know what the world is like beyond a windoless shed and animal pellets?
Just defrosting the last duck from the last special. Time to stock the freezer again!
Thanks for the recommendation, got one today before the weekend shoppers cleared them all out.
I missed out on the duck Aldi was selling for this reason, I suspect.
Thanks nocure, I haven't had a good duck in a long time.
