Google Apps for Business? Do you need it co-located with you, in Australia, or does it not matter?
We are currently using outlook and onedrive so would like to stick with microsoft products. And we are based in Melbourne.

Where are you located? I'd be happy to throw you a high-level quote. For a company of your size, I'd recommend sticking with a full-cloud solution - no on-premise server infrastructure at all - just a firewall.

You can directly approach cloud companies to obtain that kind of service. Major cost difference would be if you are looking for completely private cloud or use shared infrastructure.

All the big cloud service providers telstra, optus, azure, amazon, macq telecom offer hosted solutions. Depending on what you want they should be able to offer something in-house. Any small IT company you go with is just going to use one those services anyway

There are a few variables that need to be considered:
How tech savvy are you?
What is the business ie how sensitive is the data?
How much time are you prepared to involve yourself with the tech side of things?
To deal with a large supplier can be both costly, time consuming (when things go wrong or need modification or customization) and a certain degree of tech savviness.
Too small a player and you will be ripped off while not having assurance of continuity of service.
Best bet is to go with another small business who resells cloud services but who also has appropriate assurances (and insurances). Someone who you can ring and straightaway knows your business and knows how to implement changes or fix issues promptly. A good analogy would be a personal lawyer vs a ginormous law firm.
The yardstick will be can they translate your needs from technospeak to english while still being reasonably priced but not too cheap. If they try to bamboozle you with technospeak you have the wrong person. They should be able to interpret and then give you an offering in plain english with minimal stuff you don't understand.
Expect to pay $400-1000/month at least. This would include little hardware, around 4-6 support calls a month which usually resolve your issue if they know what they are doing. You will need a good internet connection for a cloud service to be viable.
Sorry I can't recommend someone in Melbourne but it would be worth your while making a few calls to mid sized businesses and if they are prepared to spend the time talking about your needs and even visiting you for no fee you are on the right track.
