That's a good point, and if you're willing to do some custom home automation by piecing together separate modules, you can certainly save some money AND get a custom made solution exactly for your needs.
You could even go further: Raspberry Pi Zero W (approx $15 during the sales reported here) + Raspberry Pi camera module (approx $10) + some cut & pasted code = $25.

(The Raspberry Pi route can even get you a HomeKit compatible video doorbell, which to my knowledge, none of the big ones including this Ring and the new Nest are.)
That said, the Ring doorbell is a solid product and if you simply don't have the time or inclination to futz around, it's a fit and forget half hour installation job. It even comes with its own tool pouch, with the world's smallest spirit level included!
Your joke about the Chinese government is valid, but it's not so much them, as I'm sure the Chinese government could care less about the view around your front door. (Or Amazon, who now own Ring.)
Rather, it's the lax security in general of the Xiaomi solution. IP cameras are notoriously poor in security. Remote access by hackers of any nationality is a very real concern.
Nest is owned by Google and ring owned by Amazon (from memory) so don't see native home kit anytime soon

If this was a once off price that then allowed local storage and remote access NOT going through their servers, I'd be up for it.
But $350 odd for the initial price, then a monthly subscription afterwards, is a joke.
Amazon bought Ring a month or two ago.
Chances are, they'll incorporate Ring access into an Amazon Prime subscription.

The Ring Pro is actually an older product than the Ring 2, and the latter may be more suitable for some people as it is self-contained.
The Ring Pro needs to be wired in to an existing 24V powered doorbell fitting, which I think might be more common in the US than Australia.
The newer Ring 2 is self contained with a high capacity lithium ion battery that only needs to be recharged approximately every six months. It still needs to be screwed to the wall or door frame, but the lack of wiring makes installation much more straightforward.
Amazon now own this company so will wait to see what they do with it going forward
Beware - there will come a time, almost certainly within the next 5 years, where the service will be halted and your $350 doorbell will function no differently to a $20 one.
