I find after 3 months bottled the taste really improves, if you can wait that long.

    Next time you are in Innisfail FNQ drop in for a taste. I've been making low-alc (only add ~ 300g sugar to the mix) Cooper's Stout since 1980s, bottle in recycled plastic softdrink bottles> have ~ 200l in the shed, always drinking weather up here and bar is always open, thanks to Uncle Dan.

        Err… thanks, but think pisshead is more apt description re. my current status. Switch to recycled softdrink bottles, cuts labour-time, avoids crown-sealer 2% busted bottles. Cheers

      1 can Coopers Stout
      300g sugar
      Kit yeast
      23l fermenter
      ?

      • Sorry for late response. Easiest method is one can Cooper' magic, ~300g brown sugar, mix with 2l warm water and divide into two 10l buckets. Cover loosely (large saucepan lid) overnight, allow the initial fermentation to commence - don't put too much water in, or it will bubble out of the buckets, Add a further 2 litres of water to each bucket each day for the next four days. Up here in the tropics, initial fermentation will be complete in 4-5 days. Pour off each bucket into a 42l plastic tub (can find in KMart for ~ $6), avoiding pouring in most of the yeast (which will have settled to the bottom of the buckets). Add tap water to take the tub to 25l (those tubs have gradations on the inside).
        To 20x 1.25l clean (but no need to sterilise) empty fizzy soft drink bottles, add a tablespoon of brown sugar. I use a 2 litre plastic jug and a funnel, to transfer the beer into the bottles. Screw caps firmly, store in the dark. DON'T drink until at least 10 days have passed, or you'll get shocking diarrhoea.
        Can leave for years (my max is three years - did have glass bottle beer stored (actually, forgotten then rediscovered) for six years.
        How to improve technique? Well this is literally bucket chemistry. No need to sterilise anything, but do rinse everything. The yeast overwhelms any pathogens (even the odd housefly that decides to have a pool party while the tub is briefly holding the 25l). As Dave Id says below, better to prepare 50 litres at a time… Cheers, AA

    Nice one. Might grab a couple this week. I only use the brown PET bottles from Coopers, haven't tried regular soft drink bottles, but might give it a crack!

    • yeah, I've been using soft drink bottles for awhile. The reason brown was used, as sunlight reacts with hops and causes off flavours (e.g. heinken) so just keep it out of the sun & you'll be fine.

      It's cuts the cleaning & bottling down to under half. The fizz mostly goes out 24hr from opening, but unopened, mine can last a year no probs & they're still fizzy.

    Used to put two cans of Coopers Stout mix in a 30 Liter fermenter and fill it up "not too close to the top".
    Yummy.Especially after a year or two.
    Unfortunately a crook back put a stop to that :(
