  • I've been using that same Global set for about 8 years now. Excellent set of knives. My only criticism is that the only serrated knife in the set is quite short. Not a big deal if you use a serrated utility often but I dont have much use for it and would prefer are longer serrated knife for bread.

  • I would like to get some good knives but know nothing about them. Should I just buy the Millennium ones without thinking about it? Or is it better to research them more?

      Its better to get knives that you will use rather than a set which may contain something you arent likely to want.
      Having said that, the global set is pretty decent for everyday kitchen work. Its got pretty much everything you would want except a long serrated blade, which isn't a big deal if you dont slice bread often. The serrated utility knife in the set is no good for bread. I've had it for 8 years without any issues.

      Globals are mediocre knifes for the price. Shuns have a similar price/performance imbalance. I own a Global, and it was my favourite knife for years because of the ergonomics (which are polarising), but the edge retention was poor, and it was difficult to sharpen. I've got some relatively high-end Japanese Swedish steel knives, which have incredible edge retention and are easy to sharpen, but are quite high maintenance. For someone looking to get a first set of good knives, I'd recommend the Victorinox fibrox range, because they're extremely cheap and better to live with than the Globals (edge retention, ease of sharpening, etc), just losing out on sexiness, and out of the box sharpness (which doesn't last long anyway).

      • Agree, my Globals seem to constantly need sharpening. The Global water sharpener is ok but the knives only stay sharp for a couple of weeks.

    • I would recommend getting a 210mm or 240mm tojiro chef knife, a good pairing knife (tojiro one is fine), and Mac bread knife. The total of these knives may cost you about $350 currently, but the quality of these knives are much better than global steels

    Got some globals around Xmas. Passed the sharpness test when my partner managed to cut both her finger and fingernail in a single pass last weekend. Would recommend.

  • It was mentioned somewhere like such knives may require some special sharpening approach or something like that, is that true? Also how often these knives should be sharpened?

    • Easiest is to use a sharpening wheel from Japanese manufacturer such as the global minosharp or tojiro wheel sharpeners, which are set at an angle of 15-17 degrees. Alternatively if you can learn to use a whetstone, use a minosharp guide rail

    I'd go for the shun personally. Have a few albeit different ones (the ones with the damascus pattern), but you don't know how much you miss them until you're using someone else's knives

  • I have this as well.. although I did like them at the beginning I now don't like them now.. why ?
    Yes they look good, feel good, etc..

    But 2 things that I don't like…
    1)The thickness of the main blade..
    2) The amount it cost to sharpen it back to life by a professional ( if you don't know how to do it yourself ) I think it was $40 per knife or something..( a few years back now )

    I believe these particular knives have a special blade angle such that you can't use one of those electric sharpeners or the one that you just push the blades
    cause then you may damage it.

    The global sharpener that I bought with it doesn't seem to sharpen it that well either ..

    I was wishing for a knife that would slice like the ones on TV where you throw a tomato at it and it just slices in half..

    Some other knives I have at home bought very cheaply with the wooden handles is very thin ( less resistance ) and very sharp, cuts like a dream..

    Having said all this, where do people get their knives sharpen, how much and does it perform well.

    • Just learn how to do it yourself!
      I watched some videos on YouTube and seriously, it's not that hard to learn…just buy a set of good quality Japanese Waterstones and flattening stones and you're set for life (don't use the sharpening tool, even if it has the Global brand, as they're crap).

    • Have a set of Global a for several years and I use a sharpening steel every few months to bring the edge back which just takes seconds for each blade.

      Often wonder about the history of the set as I bought them from the Victorian Justice Department disposing proceeds of crime items on eBay.

    Global really seem to have taken off - everyone I know buys them without even trying them.
    I prefer Wusthof myself. The weight and handle are more comfortable and they hold an edge well - easy to sharpen too.

      Masterchef effect / product placement. It's no coincidence that Global is the brand of knives used on the show…

      Having said that we bought a Global set before it got big via Masterchef and they have served as faithfully since. We only have the basic water sharpener but it seems to do the job well enough for us. I think we got it for $240~ so this is a great price.

    I have a set of globals but often find that I use my set of cheap kiwi knives instead. I hardly use the globals anymore because the kiwis are as sharp as razors and maintain their sharpness with a quick swipe on a stone sharpener.

    Save some money and go to an Asian supermarket and buy some kiwi knives for 1/10th the cost of the globals.

        Been using Kiwi $4.50 knives for 6 years, amazing knives and the price is mental.

      • +1 for Kiwi. I do a fair bit of cooking and a Kiwi #171P is all I ever use. For everything. Total cost less than $3 for all the knife(s) I need.

    And honestly, who pays $1000 for 7pce knive block, please, give it a rest.

    I've had a Mundial Knive set for 20years+
    They cost $145 for 9pces, almost as sharp as when i bought them
    Simple knives, not the best steel, easy to resharpen, solid and honest.

    Im sure both these knife sets are great, and its better then being ripped off twice as much :)

    In saying that, i have always wanted a set of Shun Classic Knives

      Spot on. My favourite knife is a $5 global knock-off I got from Woolies. Knowing how to sharpen it means that it cuts like a $5000 knife :p
