      • Thanks for the advice. I just remembered that I saved a bunch of information about knives and sharpening on my PC about three years ago. One the recommendations was to watch the stone sharpening videos by Japanese Knife Imports.

        I can imagine that it could get a bit overwhelming. It kinda reminds me of car paint polishing.

        • Good knife will stay sharp long time (if not abused).
          I won't be able to develop sharpening skills if I sharpen them once a year. :)
          So tools like Apex help. :)

          Hmm, I dunno about that. There are different types of "good" knives and they have different hardness levels. From what I recall, the harder knives develop small chips easier, while the softer ones get dull over time. It's been a long time since I've read about this topic, but Tojiro knives are on the harder end of the spectrum at their price points. They can be sharpened to have a finer edge than something like a Wusthof, but are a bit more delicate. I hope I remember all that correctly.

          I have few knifes with Rockwell hardness 60 to 61 HRC. And they last long time - I have to sharpen them once or twice a year.
