  • Pretty good deal, bought mine in November from Kitchenware Direct for $169 shipped. The knives needs no introduction and so far they've been great, had been waiting patiently for a smaller set like this to turn up, perfect for those who don't need the extra blings a 7/9/11 piece offers, much much cheaper than buying them separately.

    The ceramic sharpener is great with other knives and does a better job than a standard honing steel, just remember these Jap knives have varied bevel angle so do not apply the same angle when sharpening, takes a while to get used to.

        Not quite so vertical but there's a big bevel difference, that's one of the reason they're sharper. When sharpening you have to do one side almost vertical, then angle a bit for the other side, otherwise overtime you'll turn it into a non-Jap knife.

        • Not all Japanese knives are set with a single bevel. I've never owned any Globals but I've never heard of Global with the edge you're trying to describe.

          Got anything to show these have some kind of offset edge? Might save new owners store trouble.

          No not all Jap knives, but many are for their heavier purpose of slicing than more westerner's purpose of chopping.

          I wouldn't be able to take a close enough photo to illustrate the difference in bevels. What makes you say "Might save new owners store trouble."? They're terrific knives for the sale prices they can be had, the bevel is just something to note as not to sharpen them the wrong way as one would with more identical angle bevels of western knives.

          Reason I asked is that I can't find any information on the knives in this set having an offset or asymmetrical bevel and I think what you're saying is incorrect. While most people wouldn't notice, there's enough of a difference in use (left and right handed) and sharpening (wouldn't be able to use the Minosharp pull through sharpener or rails) for Global to highlight if these knives had anything but a symmetrical bevel.

          I don't doubt that they're great knives, only reason I don't own any is because the handles aren't right for me.

          I went back to look at them just in case I'm crazy, but they most definitely exhibit asymmetrical bevels. When I got them I thought to check as I've not previously owned any Jap knives. Next time you bump into some, check them out :)
