Just did a Live Chat - once you receive the SIM and go about activating through the website, you go through the process of porting or whatever, and in there is the option of going on the Pay As You Go plan.

It's advertised as data only, but it includes PAYG. I don't think Amaysim can make a data only plan. Their data only sims include PAYG.

That's what I've been doing.
The 10GB data plan came with a PAYG plan with it (not advertised but it's included) with $5 starter credit. So you could actually make calls and texts with this sim, even though it's advertised as a data only plan.

You can activate later. But I don't know how long later. I kept mine for over a week before I activated it.
Does it allow to be used in mobile hotspots? My amaysim $1 sim does not
What mobile OS are you using? It's just the standard Optus network. The Amaysim data pack I use certainly works on my phone (Nexus 4) for mobile hotspot.
Ipad ios 8.x can't remember. It just says contact optus and doesn't allow hotspots
