  • Hi - What is "good acidity" on the scale of high to low? I am not a fan of high acidity coffees.

      Some coffees are naturally lower or higher in acidity and also generally speaking the lighter the roast the more acidity remains in the bean. The darker the roast, the more acidity is burned off.

      These are both great coffees for milk based and therefore the acidity is necessary to punch through the milk. I am not roasting lightly but these will both be a medium to medium dark roast.

      I would say that they both have an average acidity but the Tiger Mountain maybe a touch more than the Jamocha. It is difficult to say as taste is subjective.

      Often you'll find Brazilians a bit lower in acidity and quite malty and chocolatey otherwise you could look at some Central Americans like Mexico or Guatemala but they'll have varying degrees of acidity.

      Can''t offer the 8x235g at the moment. I know it's a popular one but we're in the middle of our campaign to manufacture and release our new product Brewover and I'd have to up my coffee consumption to at least 20 piccolos a day to have the energy to run that deal at the moment ;-)

      It is something that I'm aware you guys want so I'll run one as soon as I can but whether it's this side of Christmas I can't give any guarantees. I'll try my best.

    This is brilliant timing, I will run out of beans on Friday. I'm looking at getting into cold brew - will either of these roasts be good for that?

      They'll be ok and taste pretty good if made as cold bre and mixed with milk and sugar as they're fairly chocolatey and nutty but there are definately some better options.

      Are you planning to drink as a cold black coffee or mix with milk and sugar for a smooth iced coffee?
      If drinking black(try a 1 to 13 coffee to water ration) then I have some amazing coffees that would be great for this as a light roast. Kenya Wamuguma, Ethiopia Bita Bonga, Ethipia Guji, all the geishas, Costa Rica Red honey, El salvador Himalaya Naturals, Indonesian Sulewesi just to name a few

      If you want to mix with milk and maybe raw sugar then I would highly recommend starting with a lightly roasted Brazilian. The best 2 I've found work for us are the Brazil Sao Silveste and the Brazil Monte Alegra washed.

      I tend to roast these Ozbargain deals as a medium to medium dark roast as if I go too light then they can be a bit to acidic for people and not to the general consensus.

      Any standard website orders I do an individual small batch roast to the exact roast preferences of the individual.

      Also I just received today a big shipment of 6-8 cup cold drip units today in wooden frame a bit like Yama but cheaper versions. They're going to be around $120 with some free lightly roasted coffee if you're interested.

      • Thanks a lot for that info. I tend to prefer lighter roasts as well, I don't understand all of the science behind it but I find I can pick out more distinct flavours when the roasts are on the lighter side.

        Is there a possibility of swapping out one of the bags in this deal for any of those lighter roasted ones you mentioned? I was thinking of mixing with milk, so anything you would recommend.

        I've been looking at those cold-drip units but this will be my first ever batch I'm doing so I might stick with the Hario Brew Pot I just picked up and see if it is something I like. I was checking out the Brewover system you have on kickstarter too, and that looks fantastic. I just pledged. Will manufacturing still go ahead if you guys fall short?

          Hey Mozzberry, thanks very much for pledging your support on our Kickstarter campaign. Yes we are in discussion with a couple of bigger distributors and plan to manufacture but at the moment the Kickstarter campaign is lagging a bit.

          Don't worry to much we plan to get Brewover to market one way or another as we are confident with the results we have been achieving with it and believe firmly that there is a market for it.

          We are just toying with the idea of cancelling funding on the existing Kickstarter campaign and relaunching the campaign again on Kickstarter at exactly the same time with a link for existing pledgers to move across and a reduced target to ensure that we get to market through Kickstarter and we can make up any shortfall.

          If we do decide to do this then it will happen in a few days time and we will be sure to post updates and link for our existing backers to move across.

          Also please leave notes in Paypal about this coffee order and wanting a lighter roast for cold brew and I'll try my best to accommodate. Cheers

          @TALLBALLER: Thanks Tallballer, really appreciate you supporting our campaign.

          We've just cancelled the funding as we were only at $35,000 of our $65,000 goal. We have posted a new link and are waiting for Kickstarter to approve our new revised campaign with a lower $35,000 goal.

          We have had some outside distribution comittments and we still plan to go ahead with production and would love for our existing backers to move their pledges accross to the new campaign over the coming days.

          We will keep everyone updated.
