  • Anyone have a good recipe for raspberry candy on BDB (milk based)?. Their recipe card doesnt really work for me. Cant get the signature aroma it is famous for.

    • A few of things might help - 1) preinfusion is a must - get that puck saturated completely before extracting at 9 bar, 2) set the brew temp to 93 degrees, and 3) make sure the beans have room-temp aged / degassed / settled at least 15 days post-roast date. 4) use quality, fresh full cream milk and texture it to perfection so that the creaminess complements the espresso. 5) check the water you’re putting into the machine - funky water makes for funky espresso.

      Source: RC is our go-to espresso blend at home, and I’ve burned through more than a kg of RC in the early days because I didn’t lock down the above.

          Saturated in the pre-infusion, so on my machine I run brew water at 2.0bar for 10 seconds. By 10 seconds the bottom of my portafilter basket is just showing the first signs of espresso coming out of the basket (I use a naked portafilter). For the Breville dual boiler you can hold the brew button down for the first 10 seconds and that will keep the pressure down as long as you hold it, then ramp up to ~9bar once you let go.

          As for recipe, I keep the ratio that is updated on Ona's website, which adjusts as they change the components (I write it on the bag): https://onacoffee.com.au/products/raspberry-candy. Right now it's showing as 21.5g in / 41g out. Time is really dependent on pre-infusion, so I usually ignore it and stop the brew at 41g out (controlled variable), adjusting grind to speed up or slow down, but really so long as I get 41g out and keep the above variables in lock RC is, at home, about 80% as good as the same coffee brewed at their store in Melbourne.

          Update: age the beans for 21-23 days.

  • Their gateway coffee is my all time favourite. They aren't the cheapest but no one roasts better beans

      Gateway is good for milk, so is raspberry candy, but is fruitier

    I might have to try it. A colleague waxed lyrical about them. I don't think he's a vegan, but acted like one.

  • Raspberry candy as a no milk double expresso? My tipple is normally single origin Ethiopian. This blend looks intriguing.

      I've been served it as cold brew at a cafe (probably the last of a bag that was getting old). It was alright.

      I reckon it would probably go ok for straight espresso, but may not be "getting the best out of them".

      You’re better getting a dedicated single-o Ethiopian roasted for espresso (black). Without creamy milk RC is a bit of a lopsided experience.

  • Wish they did delayed postage. I just opened a kg bag the other day and have no idea / don’t have the right stuff to freeze.

    Haven’t had much luck with RC using the breville express at home. I have a seperate grinder which lets me make tiny adjustments and adjustable rpm but I still haven’t been able to make a good one consistently.

    The last bag I bought I could taste the “raspberry candy” on the first coffee but despite not making any changes to any of my prep I could not get the flavour again. It’s very inconsistent and I’ll go as far as saying they overroast their beans sometimes.

    Before when they used to stick the roast date on the bag with a sticker, I had one magically roasted on a day it was already in transit for a couple days - bit dodgy.

    It’s still my go to though because I feel like it degrades slower than other beans. I’ve rarely made a crap tasting coffee with ONA, but I have had some sour ones made at one of their cafes in the ACT. I think their baristas also struggle with RC lol.

      I get bags and divide them into 20g tubes that sit in the freezer but I used to just whack the whole bag in there. Have adjusted the grid to immediately from freezer and I don’t spray cause there is already some moisture. People will say it comprises the beans but it’s sealed and it’s perfect everytime.

  • $72 a kilo? For real? Is it over 3 times better than the Brazilian Aldi stuff? Which I find pretty damn good. Hmmm. I find that real hard to believe.

    • At least 3 times better, IMO it's 80x better in taste, and more importantly, WOW factor when you serve it to friends and blow their minds with the wild sensory experience.
      But like all good tasting things, it's definitely a luxury good. It's definitely a treat in our household - we only buy it for my partner's birthday month celebrations.

      If you get an opportunity to go to an Ona flagship store, pay up for a RC latte with freeze-distilled milk. It'll be an experience.

  • The last 2 bags of RC I ordered were not good, the most recent being before Christmas. Have since stopped buying from them. Has anyone else noticed issues with Ona quality? Beans I get from other roasters have remained consistent so I’m sure it’s an Ona issue and not my machine.

    • Yes i have been using ONA way before they rebranded their coffee and have noticed it's not always roasted the same - i've had some that were clearly over roasted which gave me bitter coffee, while the next bag same settings had no bitterness at all. RC is the most inconsistent of all though, i think it likes a courser grind to bring the raspberry flavour out, so the same volume you'd normally aim for but a pour probably 5-10 seconds quicker e.g. the scales i have start weighing/counting the moment the coffee hits, i aim for 30-35g over 15-20 seconds (add the ~10 seconds of pre infusion on top so 25-30s total).

      Doesn't always bring out the flavour but if i grind a little finer it never does.

      • I don’t record my grind settings between bags. I use different beans every week and got tired of keeping track. Whenever I start a new bag, I check the brew guide online and dial in to that each time then adjust to taste. There was no saving my last two bags of RC. Good to know I’m not the only one who noticed their issues. There are other roasters with similar raspberry flavour profiles that might be worth trying.
