Demoiselle Absinthe - a classic verte absinthe. Grande Wormwood (Artemisia absinthium), fennel and anise are distilled, then naturally flavoured and coloured using only Roman Wormwood (Artemisia pontica), hyssop and a hint of lemonbalm.

It is against the law to sell or supply alcohol to, or to obtain alcohol on behalf of, a person under the age of 18 years. Liquor Licence: LIQW880010305

The only thing used in the creation of our Absinthe are the following herbs:

  • wormwood (artemisia absinthium)
  • aniseed (pimpinella anisum)
  • fennel (foeneculum vulgare)
  • petite wormwood (artemisia pontica)
  • hyssop (hyssopus officianalis)
  • lemonbalm (melissa officianalis)

No colours, no extracts, no essences, no shortcuts.

The wormwood, petite wormwood, hyssop and lemon balm are grown onsite at our distillery, in the harsh rolling hillsides of the central tablelands NSW, Australia. Freezing winters, blazing summers and an altitude of 800m empart a character to our Absinthe which isn't achievable any other way.

We take great pride in the growing of our wormwood ("Wormwood/Grande wormwood" Artemisia absinthium and "Petite Wormwood" Artemisia pontica), both represent years of work. After obtaining as many examples of petite wormwood as possible from around Australia we set about propagating it from cuttings, taking several years to get enough plants we were happy with to start production.

The same can be said for our grande wormwood (artemisia absinthium), after sourcing seeds from all over the world then growing plants from seed, cross polinating only those plants we were happy with and then repeating this for three years we now have our own wormwood. Each year we collect the seed from our naturally pollinated wormwood and use that for the next years plants.

Our base spirit is made using 100% Australian cane sugar, before fermentation we invert the cane sugar using local lemons and heat, after fermentation it is distilled three times in our dedicated base spirit pot still. This yields a refined base spirit that still has enough of the character of the cane sugar and inversion to make our absinthe unmistakeable.

The next step is a two day masceration of the fennel, aniseed and grande wormwood. The absinthe is then distilled in our copper headed “Turk's Helm” style absinthe pot still.

Finally it is flavoured and coloured using only Petite wormwood, hyssop and a hint of lemonbalm.

    Thank you for your question. The final price is $65 with free shipping. Our absinthe is bottled at 66% alc/vol, meaning that a 375ml bottle is equivalent in standard drinks to other liquors that are sold in 700ml bottles.

    Unlike almost all other absinthe products, Demoiselle Absinthe is produced from the raw ingredients that were originally used to make absinthe in he 19th century and does not rely on artificial colouring or extracts to achieve its flavour. The end result is easily discernible in both flavour and louche.         As is covered by the general absinthe information section of our site at http://demoiselle.com.au/#absinthe the concept that absinthe makes you hallucinate is somewhat of an urban legend. Absinthe is bottled at a very high alc/vol percentage compared to most liquors which means that it's very easy to drink more than you expect. Most stories about absinthe hallucinations are from people who have simply had too much to drink.

        Our recipe goes back over a century, so the absinthe we make contains exactly what absinthe has historically. Wormwood is the ingredient that people claim will make you hallucinate. Our absinthe contains two types of wormwood that are grown by us in Australia, so if there is any truth to the hallucination stories, our absinthe is probably the best way to test for yourself.

        Apologies for my misunderstanding. As we are a new distillery we have priced our initial offering as low as possible. At present the cheapest you will find our product anywhere else is $75 - so this deal saves you more than 13%. As demand increases we expect to raise the RRP, so even $75 is less than other distilleries would price a similar product.

        As explained above our absinthe is a premium, bespoke product that is created by hand. We are not a large distillery and we are not aiming to make a mass-market product.

The risk being a new distillery is high, although - being dedicated the rewards of a good absinthe are also present … $65 is quite a premium for a 375ml, any Absinthe' you could compare this to - Also, do you host kids parties?

      Damn… Took too long - I have failed Ozbargain, only for the sake of a potentially great Absinthe and limited supply, I have made a (sorry) impulse buy. I guess this can be justified with my Tax Return (nothing can excuse an impulse buy).

    The development of our product has been a long and winding road, born out of a passion for the spirit. This is our first commercially available batch, but a lot of R&D has gone in to perfecting it, so anyone enjoying our absinthe will most certainly not be an early guinea pig. We have thoroughly tested it ourselves (ohh yeah ;) against the best absinthes available and we would not bottle and sell anything we weren't happy to put our name on.

    If you compare this special offer price to that of competitor absinthes you will begin to see that you are getting a premium, all-Australian absinthe for price of other standard, mass-market (and poorly produced) absinthes. The entry-level 'Green Fairy' absinthe (the cheapest available), for example, is being sold through Dan Murphy's for $64.99. That bottle contains 24 standard drinks, compared to our 20. Green Fairy is a notoriously bad absinthe that uses artificial colourings (Have you ever seen herbs that are aqua in colour?) & herb extracts, not the real thing as we do.

    We do not at present host kids parties, but we do occasionally behave like children when partying.

        and calling it and charging as it was a premium product

        this is a new product the price should reflect that …..

      A producer/wholesaler licence is what is required to operate a distillery. Our distillery is located in the rolling green hills you can see as the background image of our website, not the outback.

      Everything used in the production of our absinthe is grown in Australia. The costs of producing alcohol in Australia are high. We would prefer to produce a unique, distinctly Australian product that is made here with care, not produce a mass-produced spirit from imported ingredients. 6 different herbs are required to create absinthe the propper way. It takes time and effort to grow one crop, let alone 6 different ones.

      While I don't have an opinion whether this is 'outback still crap' or not (although the superfluous marketing talk isn't at all reassuring), paying close to $200/litre for an unknown liquor really isn't a "bargain" by any stretch of the imagination.

    Have tried Absinth a few years ago, thanks to an old Whirlpool thread: http://forums.whirlpool.net.au/archive/202856
    Went and bought a bottle from www.absinth.com.au - the Staroplzenecky Absinth with Alcohol 70% v/v, thujone 10 mg/kg - it was about $70 for 500mL or so and, by memory, tasted pretty good! If you like aniseed, you'll like Absinth! Sugar and a teaspoon then setting it alight is a must try!
    Unfortunately though their eBay shop doesn't exist anymore! As stated on their website, Thujone is the component of wormwood that arouses emotions and imparts the quality peculiar to absinthe. It has a similar molecular geometry with THC, the active chemical in cannabis.
    Hope your first batch sells well OP - not many absinthe producers in Australia, that's for sure!

    • Thanks for your kind wishes. Absinthe is indeed a mysterious spirit, and enjoying it with sugar is a common method. Some absinthe purists say that, as people do with whiskey, it is best enjoyed with clean, cold water alone as it brings out the distinctive flavours to be more easily appreciated. Our policy is: whatever floats your boat :)

  • I guess WA (& NT & TAS for that matter - possibly New Zealand???) don't exist then… shame, I do like a good absinthe - tried a number of brands; educated a number of bar staff on how to serve… I guess I'll just have to stick with the "other standard, mass-market (and poorly produced) absinthes"

    Otherwise, sounds like a good deal, or at least a good enough storyline to entice potential buyers.

    HINT: minus at least 2 off any potential product sales to these areas.
