  • So, what, in practice, makes them 5 times better/more expensive than normal knives? Curious.

I don't own any Shun personally, but I do own a small collection of Mac knives. I'm quite picky when it comes down to utensils and essentially it comes down the feel of the knife that you're using. Expensive knives cut cleaner, easier and hold an edge for longer, if you're willing to spend the time to maintain them. The balance of the knife also feels much better, and it helps when the weight of the knife does the work for you.
A blunt cheap knife can be dangerous as you can be more likely to slip and cut yourself. Cheap knives are basically made from dodgier alloys which chip and lose the edge more easily.
These Shun as far as I'm aware are made from better steel than the current Global knives which many people seem to swear by.

Also these knives aren't meant for cleaving bone, use a cheap cleaver for that, otherwise you will get chipping. But if you want clean cuts, these are the sorts of knives you want.

This is the crux of it really. The steel used and how it's treated is the primary determinant of durability and edge retention, and Shun uses what is essentially the best steel available in mainstream knives.

        • When I was shopping for knives the Shun felt the most awesome. Unfortunately they were out of my price range and had to settle for Globals. Very tempted to buy!

  • Some of the negative reviews at Amazon are damning.

I have the Shun classic chef knife and it's awesome. Highly recommended
I like it better than my Wusthof chef knife (which is also really good).

  • I also have the chefs knife, worth every penny. Keep in mind if you get it sharpened make sure the sharpener knows the appropriate angle to do it on, its Japanese.

And for gods sakes stay away from those drag through sharpeners.

Is a set of 3 necessary though? I wouldn't mind a paring knife too but the chefs knife is basically the staple of the kitchen. Still, excellent price.

I used Global knives & then bought a 6 piece Shun set & knife block for $300 ( a one off super deal, that's why I bought them).
Shun knives are by far the best I ever used - super sharp, stay sharp MUCH longer, perfect fit in my hands.
It's one of those "you won't know until you try them" experience.
You buy a set & they will last you a life time if you look after them - don't drop them , clean & store after use, preferably in the knife block or storage case.
Global knives feel cheap after few weeks of using Shun.
They will stay sharp for a very long time, but you need proper tools & techniques to sharpen them.
Also they are not suitable for cutting hard things like bone, frozen stuff, etc.
