What are the must do things/activities there?
We will be staying in Denarau. I checked out Ecotrax but that is booked out until June/July.

Why would anyone go to Fiji for parking?
There is excellent parking here in Australia !!!
Too expensive though.. parking must be cheaper in Fiji..!!!
You get what you pay for though…
Park & Fly.. I guess $30 more than blu emu is worth especially while travelling with a kid.
There are lots of islands you can do day trips to. From the port at Denarau. I did a scuba dive as well and they also take snorkelers. There are also islands where you sit and have a drink at the beach.
There are lots of hotels there so we went for dinner at a different one every day

In that case just do what you want. I've never met you, so I can't recommend anything that you might like.

Fishing charters out of Denarau port are fantastic. Try the hot springs and mud bath at Sabeto too. If you rent a car it makes it much easier to get to Nadi town where there are better value/quality restaurants and supermarkets, handy for visiting Sabeto and other attractions too rather than taxi.
I see you have commented your child is <2yo. Wouldn't recommend the fishing charter in that case unless you use a babysitting service. Sea is usually rough but it's a long boring day for a baby with no feeding/changing facilities.

Avoid Nadi and Suva.
There's currently a big HIV problem in Fiji. So that's the two things associated with that that they must be doing a lot of there. Do either interest you?

Nadi and Suva markets are great, go to Sigatoka, Taveuni Hill Fort, Fishing Charter, a trip to the Yasawas or other islands you can get to from Denarau, do a village trip, horse riding at Wailoaloa, there are heaps of nice hikes, day trip to Natadola beach, there's no shortage of things to do.

Take a flight to Port Vila, Vanuatu, then a boat to Champagne Bay.
Do you mean Champagne Beach in Espiritu Santo? May as well just get a flight to Espiritu Santo and stay there, the entire island is littered with incredible beauty.
the journey was to spread the experience & provide contrast to ES's Champagne Bay :)
Denarau and with an under 2yo.. Just enjoy the resort and pool etc.
Take the Bula bus which takes you to the other resorts and the shopping centre, some decent food there and marina there if you want to do day trips
We stayed at the Hilton but did go to the Sofitel a few times for their buffet dinners, this was March 2020
The beaches are shit at Densrau so don't sit at the beach.
