    This is only cookbook I have ever owned and I think it's fantastic. Teaches you principles that mean you don't always have to be following a recipe but can use what you have to make something delicious.

    Asparagus salad with toasted almonds and goats cheese is a face.

    Only downside is the book is huge - probably 12cm thick which can make it hard to find a spot for while you're cooking.

    Ah I've had this for a few years. If you are interested to understand how and why to cook food in particular ways (better ways), then this is a great read. It's thick, has a lot of pages and a lot of recipies. But most of the content is Kenji doing science experiments with many photos on different ways to cook or prepare something. Including side-by-side outcomes of doing something in different ways. Like a steak for example, he concludes that flipping a number of times (not once) is best for char on the outside and even cooking on the inside - and proves it with various photos of single flip vs multiple flips, and different cook times. That goes against my dad's 'wisdom' of "Son, you must only flip once! Anyone who says otherwise is a tool."

    There's a great recipe for Southern Fried Chicken, I've made this a few times and it's delicious. The recipies are quite American. But I like it for the methodology content.

    I have lots of cookbooks, so many I've had to cull (or at least hide from my wife in the shed).

    This is a great addition, really interesting to read. Not really a recipe source (although it is), more of a scientific explanation of how cooking works.

    Has made me a better cook (along with Salt Fat Acid Heat). Highly recommend if you are interested in why some cooks seem to make better food than you from the same ingredients.

  • Pivotal book for me, signed in just to upvote and comment despite it being expired. Also have his Wok book sitting next on the pile to read. I hope it's just as good.

  • Backed this on Indiegogo back in 2015 and have actually read it unlike every other cooking book we have. Kenji is top tier.
