Here are some thoughts on this knife from ChatGPT:

Pros:

✅ VG-10 Core Steel – This is a high-carbon stainless steel known for its excellent edge retention and sharpness. It’s commonly used in premium Japanese knives.
✅ Damascus Cladding – The layered steel not only looks beautiful but also adds durability and corrosion resistance.
✅ Sharpness & Performance – VG-10 knives are usually razor-sharp and maintain their edge well, making them great for precise cuts.
✅ Brand Reputation – Shimomura Industry is a reputable Japanese knife maker, so you’re getting a well-crafted product.

Potential Cons:

⚠ Maintenance – While VG-10 is stainless, it still benefits from proper care (hand wash only, dry immediately, and occasional honing).
⚠ Price – VG-10 Damascus knives can be pricey. If this is your first high-end knife, you might consider if you really need VG-10, or if something like AUS-10 or VG-MAX would be a better balance of price and performance.
⚠ Handle Design – Some Japanese knives have more traditional handles (Wa-handle), which might feel different if you’re used to Western-style knives. Make sure the grip is comfortable for you.

  • Would I be able to use my global water sharper

    • +3

Just be aware that with "fixed angle" sharpening systems the angle might not line up with the factory angle on the blade and that could lead to issues.

      • Can't find the cutting angle.
I know the global sharpener is 15 degrees

      • What issues? Run it through the Global enough and you have a new angle on the blade that matches the sharpener

    • You can but imo the global sharpener kinda sucks.

Learn to use a stone, the Global Sharpeners after awhile dont do much and over time can re-profile your blade making it harder to sharpen in the future.

The blade is an awkward length IMO. Too small for a workhorse chef's knife but too big for a delicate work. Might suit some but buyer beware

    Is this stanped or forged

  • Don't need more knives..

Nice deal but could've done without the chatgpt summary. I trust that thing about as far as I can throw it

    • Yeah bit lazy. Agree, they can hallucinate often.

    • +2

Yeah totally unnecessary, it is all just vague, general commentary based on the internets understanding of these features, its nothing about this specific knife at all thats tangible or useful to someone potentially buying it.

  • nice, got one for myself and one for a gift. great reviews online and it's a trusted brand locally in japan for daily and industrial use. 80% claimed as of now.

Without being too picky, isn't vg10 a Japanese steel?

IKEA VG10 knife better local service than overseas

    • For the same price, definitely prefer something made in Japan, than China.

      Also a different style knife.

  • Shame I missed it, looks like a comfy handle for large hands
