    x50crmov15 is a german steel desgination, so a chinese made knife using that designation, who knows what you're getting. Even if you do get x50crmov15, it's not a high end knife steel

    The maximum hardness of the x50crmov15 is 56 HRC. They won't hold an edge for long. They should be reasonably easy to sharpen, but you'll be doing it constantly.

      X50CrMoV15 is used by many european knife manufacturers, Wusthof Trident, Henckels etc. It's a reasonable choice for people who don't want to be too fussy with their knives.
      Agree about the who knows what you're getting part though…

  • Yeah, you really want VG10 steel if stainless or something like 1095 for a non-stainless carbon steel.

    I think they are trying to blind people by science on this one, this is not a great modern knife steel and will dull very quickly (although it would be easy to sharpen) so unless you know how to sharpen knives, id give this a miss - at least it would be exceedingly stainless.

  • Some people swear that all you need to cook with is one good quality, sharp chef's knife. The rest of us buy 15-piece knife sets and throw away the whole block when they're blunt.

      Even as a chef, I only find myself using a peeler, pairing knife, and a chef's knife. The rest are throwaway.
