Anyone know where to get San Marzano tomatoes in Australia? Not common for OzB but they take a spag bol to 11/10
Mutti also does San Marzano and you can get them from Woolies, Harris Farm or I believe any Italian grocers.
Costco often has Kirkland brand in a 3 pack of 790g tins

400g is convenient and the best size unless you usually use two cans at once. Probably keep in another container for a little while in fridge.
agreed for a weeknight meal, but when I make a batch of ragu I'm making it for multiple meals so the big tins are fine
San Marzano is more a different taste rather then better in my opinion.
Even in Italy I saw plenty of Mutti etc but not much San Marzano (based on peaking at their food prep area)
San marzano is best for pizza or for a tomato and basil pasta.
It will be pretty much wasted in a bolognese ragu.
I really don't think you'd be able to tell the difference in a bolognese of all things.
yep totally wasted in a bolognese ragu where tomato is one of the frankly minor ingredients - also usually you add passata and/or tomato concentrate, not tinned tomatoes
@G-rig: The actual official recipe in Bologna (yes there is one and it has been deposited at the chamber of commerce there) uses passata and tomato double-concentrate, not tinned tomatoes. Just saying
@G-rig: Passata Is zero processed, it's just tomato, lightly cooked and has a tiny amount of salt (usually less than 0.5%) for conservation. Same goes for concentrate, just it gets dehydrated. My grandmother used to make it, it's as natural as you can get. The one you buy, if it's proper, has the same ingredients, tomato and salt.
The point is, canned tomatoes have a truckload of unnecessary water which will just mess up your sauce. Hence why it's better to use passata and concentrate.
And it's not about "rules", Bolognese sauce has a recipe, and the recipe does not have canned tomatoes in it, and there's a reason for it, that's all.
But you can put all the canned tomatoes you want in your Bolognese sauce of course, enjoy ππ»π@liongalahad: Sounds good and authentic :). Yeah you don't need much tom paste, quite strong.

I've been here for a while & had no idea this was OzB favourite canned tomatoes.
it is the best - consistency in between a diced tomato and passata.
Best tomatoes to use other than making your own.

I wouldn't comment unless I'd used them. Very low quality in the 800 gm tin I used. Huge amount of liquid (water?) compared to other Italian brands (I don't bother with Australian ones). La Gina or the one that's mostly blue (can't remember the brand) are better.
Ah ok only tried the 400g ones. May try a few other brands if on special to compare but generally better than the watery Oz ones.
@G-rig: They must pump the tomatoes full of water before use. All I can say is there was a very low ratio of actual tomato to the amount of liquid in it.
@wfdTamar: Unlucky. Tomatoes are watery by nature not much you can do. Easily thicken up with cooking.
Now $1.89. No need to go there everything is overpriced or deli-style goods.
