      Great news, it's not a case of better or worse, just different. Colombia will have a bit higher acidity kick and more clean fruity notes. Moments to Memories will have a bit more sweetness and stronger chocolatey notes :)

    You mentioned you recommend freezing excess bags. Everyone seems to have a method for freezing (whole bag, dose into smaller zip locks, etc) and then a whole other process to thaw the beans for use.

    What's YOUR process and any hot tips you might have 🙂

      Nice question. You're right, there's all sorts of different methods, all have pros and cons, no right or wrong just options. As a general rule I put 500g bags in the freeze roughly 2 weeks after roasting; it's there's a rare coffee I want to be able to enjoy say a year from now then I'd single dose vac seal it. I'd say if it's going to take you longer than around a month to get through the bag then just put it in the freezer as soon as you get it. The longest freshness you'll achieve by waiting 1-2 weeks from the roast date then vac seal into single doses, of course this requires the greatest prep effort. I personally take bags in and out of the freezer if I'm going to use a bit here and there, I know this does increase the chances of freezer burn, but I've never encountered it before. If I'm going to use the bag until it's empty then I'll just leave it out of the freezer. I personally see better results by grinding it while it's frozen, but if you're going to leave the bag out of the freezer then I'd say it's best to thaw the beans first. There's very little water content so if you weight out a dose it'll get to room temp fairly quickly :)

        Are the LB bags good enough to throw directly in the freezer or should we transfer them into other airtight bags before putting them in?

      • That's it..stick to Science.

        Freezers lower temps which slows reactions (decay is a reaction).
        Freezers have a receiver / dryer. So very dry.
        Coffee has little water.
        Burrs create friction and your frozen beans will be well thawed once gone through the grinder.

      You're in luck because all our current options extract wonderfully for Pour Over, so it really comes down to your personal flavour preference :)

          Appreciate the extra info. I've recommend either our Colombia or Kenya Single Origins. Go Colombia for medium acidity but a bit more fruitiness. Go Kenya for higher acidity, a bit less fruitiness and more sweet vanilla bean notes :)

    • Hey @Skilly wonderful to hear how much you've enjoyed our special PNG Single Origin!!!

      We purchased the last of the stock in Australia, so I'm not sure if/when more will be available. We do have some coffees that have some fruitiness to them such as our Colombia, Kenya and Brazil Single Origins. However, I wouldn't say any of these are similar to the PNG, it's a different sort of fruity. Good news for you if later this year we'll release some new Single Origins which are much closer to the flavour of the PNG :)

    I agree that you need scales to weigh out your coffee, but this is an example of the consumerism rabbit hole that coffee brewing has become. Why do we need a bespoke set of scales to weigh out a tiny amount of beans? Everyone serious about coffee likely already has coffee scales. Everyone just getting into the game probably has at least a pair of kitchen scales. You don't need a set of scales with a built in cup, limiting how useful it is for other purposes. This is just another product we don't truly need, contributing to e-waste and slowly ruining our planet.

    • Hey @iMagoo I hear what you're saying and I do agree that there's a lot of gizmos being created without adding significant differentiators. However, one thing that surprised me with this device is upon testing it I found that it's convenience actually converted people from "it's too much hassle to weigh the beans" to "I love this dosing scale and now I weigh every dose as it's so easy!"

      What's done really well with this design is that it's the same size as most dosing cups. Rather than with a kitchen scale weighing out 20 grams, then grinding, re-weighing output and finding on 18 grams made it through the grinder the extra 2 grams is in the chute, then the back and fourth sage to get the output you want…the Bruer Scale Dosing Cup weighs the grounds in real time as you're grinding the dose, so there's no back and forth, it's as simple as filling up the grinder hopper and then just keep grinding until you get the output you want :)

        Serious coffee brewers are also using a set of scales in order to get the right ratio of coffee grinds in to magic bean juice out. So we already have a set of coffee scales, which can also be used in the kitchen. Getting a cheap little dosing cup, using a spare mug or just using the one that comes with a lot of grinders is hardly a bridge too far in terms of effort. Grinders are generally very consistent when it comes to retention, meaning you can just average it out after a few attempts and bump up your initial dose. Further, there's a real push in the industry towards low retention, single dose grinders.

        I get it might be a bit more convenient for some, but please reconsider selling this limited use device. The world doesn't need it. And our coffee will still be great without it.

          Different strokes for different folks. I completely understand that you don't perceive it to be useful and I've got no issue with that.

          Every single piece of coffee equipment/accessor we sell I personally buy for myself and use it at home. I pay Lime Blue Coffee with my personal money at the same price customers pay. I know you may think that's just semantics as the money ends up in the same place, but doing it this way means I get double taxed (well triple if you count the GST) plus I pay the transaction costs. In other words everything we sell I personally see value in and am willing to spend my personal money on it to use it at home. The same goes for the Lime Blue Coffee I use at home. I personally use 3 different size and function scales at home; Bruer Scale Dosing Cup to weigh the ground output in real time; Hario Polaris scales for Pour Over; Acaia Lunar Scale for Espresso. I know this may seem excessive to some, but I love making coffee and I use all 3 scales every single day. It does semi balance out because I don't get other things if I'm not going to use them regularly. For example, I have toast from time to time, but not every day, as such I don't own a toaster and instead I use the slower/less convenient method of the oven when I want to make toast :)

  • I never bought coffee before and hardly even drunk it but I intend to give it a go. But I want to try some cheap beans to start with with light roast for a cold brew… I saw that Amazon had some promotions where mainstream coffee brands were extremely cheap (around $10 a kilo or even less). Anyone byung coffee cheaply anywhere?
    Also, what is the best way to filter a cold brew? (I.e., where can I get paper filters and equipment cheap for that?) Should I get this and this?

    • for cheap beans, aldi is the go. i recall amazon doing some Harris beans for maybe sub-$10/kg years ago but that's definitely not the norm.

      i don't have a huge amount of experience with cold brew, but I've used this previously and had no complaints.

    • The V60 is for pour over. Never used it but give the product in the first link a go I reckon. Let us know how it goes.
