Most of these are good but I particularly recommend Into the Radius.
Skyrim/Fallout 4 if you want to spend an inordinate amount of time learning and thinking about mods.
I Expect You To Die, The 7th Guest, Another Fisherman's Tale are all nice and polished puzzle/adventure games.
Until You Fall is a good roguelike rhythm combat game.
Rez is nice if you can handle it in VR.
