    Are the probes able to be totally in the BBQ and function with temperatures of up to their operating temperatures?

      Ambient temperature reading up to 300 celsius — so it would be rated to at least that, and if you're cooking in something hotter like a pizza oven or a kettle with a chimney then it's going to be no good to you anyway because it wouldn't give you a read.
