I have been trying to find a flat bottomed carbon steel wok to use on my induction but the ones I could find were 'partial' flat or contained non-stick coatings. Came across this nitrided wok at costco and was impressed by how well it went for dinner last night. Its heavier than most woks but probably not throwing it around on induction anyway, I just toss the food using a wooden spatula. Might be a good option for those not willing to spend over $100 on the Yosukata one on Amazon.

    "Do not use high heat for cooking" - that doesn't seem like it woks well

    • I honestly do find that confusing because it usually indicates there is a non-stick coating. But the box says there is no chemical coating on the wok. I had it at level 8/10 on my induction and it was fine.
      The booklet says to always use oil, never dry fry.

      • The temperature stipulation is there because of the nitriding which will be damaged at higher heat.

    • One problem with using woks on high heat is that the metal expand/contract causes the bottom to buckle. You end up with an uneven surface after a while and stops working on induction/ceramic cook tops. I eventually stopped using my wok because of this :(

      • A proper real wok is usually thick. Additionally, a work would normally be used on a large burner, where the buckling doesn't matter too much.
        But yeah, back in the days I had to use a thin-ish wok on an electrical furnace. It didn't even get hot enough to season properly.

  • Be OK for home use

    Unless you have a gas highflame wok Burner @ home.

    $40, plain carbon steel.

    I've been happy with this one so far, still building up the patina but mostly non-stick after a couple of weeks.

    • The d.line ones are not completely flat bottomed, they are 'slightly flat' which didn't work very well on my induction. The best point was very small.

  • I've been happy with my Yosukata wok. The missus finds it heavy though. Yes it's pricey, and made in China despite its name, but I would highly recommend it if you don't mind the price.

      I don't see any benefit spending that kind of money on a wok.

      Just go to your local Asian grocer and buy a wok from them. The cheap ~$30 ones work just as well.

      There is nothing special about a Yosukata-branded wok - the high price just gives you a false impression.
