A set of sheets is about $125 delivered. Not sure i know anyone that just buys a single sheet without the accompanying pieces, that would be illegal in most households.
Most companies nowadays do offer freedom to buy what you need and also gives you the creative licence to mix and match. I know a lot of people discard flat sheets when they get them in a set.
I always buy only one sheet. The bottom fitted one.

Note this is per sheet, not 'sheets' as in a set of sheets…and if you're after king fitted there are only two similar colours (mid blue/grey and mid grey) available. Not a terrible deal if the sheets are nice (I haven't tried them) and you happen to need one, but somewhat limited.
